Prof. Rocco Rossano is associate professor of Biochemistry at the Department of Basic and Applied Sciences, University of Basilicata, Potenza, Italy. He received his PhD in Food Biotechnology at the University of Basilicata. His main areas of research include the characterization of  enzymes (plant proteases and matrix metalloproteinases), the impact of nutrition on human health, and nutraceuticals, enzymes, and bioactive molecules from mushrooms.
