Juana M. Morillas-Ruiz is a researcher and professor in the department of food technology and nutrition at the Catholic University of Murcia, specializing in diet fats, cardiovascular health, antioxidants, and clinical nutrition, including issues such as neurodegenerative diseases, obesity, and kidney diseases. The author is a member of a scientific committee of assessment for the food industry and is the author of many publications in JCR, books, and other journals. She has also delivered numerous presentations of many types of communications in various national and international congresses.
