Dr. Artemio Pérez López is Research Professor at the Department of Agroindustrial Engineering,  Autonomous University of Chapingo (UACh). He completed his PhD studies in postharvest physiology of fruits and Biosystems Engineering at the Postgraduate College. He recently led the technological innovation project in the artisanal  mezcal production process. His teaching disciplines include bioprocess modeling and mechanical properties of biological materials.
