University of Santiago de Compostela/Spain. Carlos is a professor at the Department of Agricultural Sciences and Technologies of the Polytechnic Institute of Coimbra---School of Agriculture. Past positions: Dean of the School of Agriculture (2004--2010) and head of Food Science and Technology Department (2011--2013). Participated in eight national (coordinated five) and two international R&D projects (coordinated one); received seven patents; wrote 40 scientific papers in peer-reviewed journals; and wrote nine book chapters and more than 150 communications in national/international meetings.
