Sensory science provides objective information about the consumer understanding of a product, the acceptance or rejection of stimuli, and the description of the emotions evoked. It is possible to answer how consumers perceive a product through discriminative and descriptive techniques. However, perception can change over time, and these fluctuations can be measured with time-intensity methods. Instrumental sensory devices and immersive techniques are gaining headway as sensory profiling techniques. The authors of this paper critically review sensory techniques from classical descriptive analysis to the emergence of novel profiling methods. Though research has been done in the creation of new sensory methods and comparison of those methods, little attention has been given to the timeline approach and its advantages and challenges. This study aimed to gather, explain, simplify, and discuss the evolution of sensory techniques.

Rapid population growth, climate change, and resource depletion pose significant challenges to global food production, demanding sustainable solutions. A Life-Cycle Assessment (LCA) provides a structured framework for evaluating the environmental impact of food systems throughout their entire life cycle. This review examines how an LCA can be integrated with circular economy principles to address sustainability challenges, optimize resource use, and minimize waste in food and alcoholic beverage production. A systematic review of LCA applications in the agri-food sector was conducted, analyzing studies published across different regions. The selection criteria included relevance to circular economy strategies, waste valorization approaches, and assessing environmental impacts using LCA methodologies. The analysis explores explicitly the synergy between food and wine production within the broader agri-food system, considering shared sustainability challenges and opportunities for resource optimization. Key methodologies include cradle-to-grave assessments and the evaluation of waste-to-resource technologies. The findings demonstrate that LCA effectively identifies critical environmental hotspots, enabling the implementation of eco-design and resource recovery practices. Circular strategies, such as the use of renewable energy, precision agriculture, and nutrient recovery, significantly enhance sustainability. However, gaps remain in accounting for social and regional variability, as well as in integrating advanced technologies. When combined with circular economy principles, LCA provides actionable insights for policy development and sustainable practices. Advancing LCA methodologies and fostering multi-stakeholder collaboration are essential for creating resilient and environmentally responsible agri-food systems.

The food industry faces growing challenges due to evolving consumer demands, requiring digital technologies to enhance sensory analysis. Innovations such as eye tracking, FaceReader, virtual reality (VR), augmented reality (AR), and artificial intelligence (AI) are transforming consumer behavior research by providing deeper insights into sensory experiences. For instance, FaceReader captures emotional responses to food by analyzing facial expressions, offering valuable data on consumer preferences for taste, texture, and aroma. Together, these technologies provide a comprehensive understanding of the sensory experience, aiding product development and branding. Electronic nose, tongue, and eye technologies also replicate human sensory capabilities, enabling objective and efficient assessment of aroma, taste, and color. The electronic nose (E-nose) detects volatile compounds for aroma evaluation, while the electronic tongue (E-tongue) evaluates taste through electrochemical sensors, ensuring accuracy and consistency in sensory analysis. The electronic eye (E-eye) analyzes food color, supporting quality control processes. These advancements offer rapid, non-invasive, reproducible assessments, benefiting research and industrial applications. By improving the precision and efficiency of sensory analysis, digital tools help enhance product quality and consumer satisfaction in the competitive food industry. This review explores the latest digital methods shaping food sensory research and innovation.

Health-promoting compounds in wine and wine-related products are important due to their potential benefits to human health. Through an extensive literature review, this study explores the presence of these compounds in wine and wine-related products, examining their relationship with terroir and their impact on the aromatic and flavor properties that are perceived orally: sunlight exposure, rainfall patterns, and soil composition impact grapevines’ synthesis and accumulation of health-promoting compounds. Enzymes, pH, and the oral microbiome are crucial in sensory evaluation and perception of health promotion. Moreover, their analysis of health-promoting compounds in wine and wine-related products relies on considerations such as the specific target compound, selectivity, sensitivity, and the complexity of the matrix.

The main objective of the present study was to evaluate terroir's role in white and red wine characteristics through human perceptions and electronic assessment. Douro wines, originating from the Douro Demarcated Region (DDR) in the North of Portugal, are renowned for their distinct terroir and historical significance. This study investigates twenty-one Douro wine samples (ten white, eleven red) from Baixo Corgo and Douro Superior through Fourier Transform Infrared (FTIR) spectroscopy, Electronic Nose (E-nose) analysis, and Quantitative Descriptive Analysis (QDA). The research has uncovered unique profiles for each sub-region, influenced by factors such as pH, alcohol content, and acidity. Through principal component analysis, the electronic nose analysis identifies separate clusters in red wines and highlights notable aromatic differences in white wines. The sensory analysis via quantitative descriptive analysis provides detailed wine profiles, emphasizing attributes such as persistence, sweetness, and acidity. Furthermore, emotional responses during wine tasting were assessed using FaceReader analysis, which revealed a range of emotions like happiness, sadness, surprise, fear, and disgust, with different intensities over time. These findings provide valuable insights for consumers, producers, and the enogastronomic industry. Graphical abstract

Understanding consumers’ emotional responses to wine is essential for improving marketing strategies and product development. Emotions play a pivotal role in shaping consumer preferences. This study investigates the emotional reactions elicited by different types of Douro wines (white, red, and Port) through facial expression analysis using FaceReader software, version 9.0 (Noldus Information Technology, Wageningen, The Netherlands). A total of 80 participants tasted six wine samples, and their facial expressions were recorded and analyzed. FaceReader quantified the intensity of emotions such as happiness, sadness, anger, surprise, fear, and disgust. Arousal levels were also assessed. The results were analyzed through principal component analysis (PCA) to identify patterns and groupings based on emotional responses. White wines evoked more sadness due to their acidity, while red wines were associated with lower levels of sadness and greater comfort. Port wines elicited surprise, probably due to their sweet and fortified nature. Additionally, female participants showed consistently higher arousal levels than males across all wine types. The study highlights distinct emotional profiles for each type of wine and suggests that demographic factors, such as gender, influence emotional responses. These insights can inform targeted marketing and enhance the consumer experience through better alignment of wine characteristics with emotional engagement.
