Emma Mani-López has completed her PhD from Instituto Tecnologico de Veracruz, Mexico and conducted postdoctoral research at the Universidad de las Americas Puebla (Mexico). She currently works as a researcher for the food industry in the Department of Chemistry, Food and Environmental Engineering at the Universidad de las Americas Puebla. She has published over 60 articles in prestigious journals and 10 book chapters, presented more than 50 research works at national and international forums, and serves as a peer reviewer for international journals.
