Doctorate in Industrial Chemistry from the University of Buenos Aires (UBA); Chemical Engineer from the National University of the Littoral (UNL), Argentina. My research work focuses on the application of environmentally friendly technologies (ozone, UV light and aerosolised antimicrobials), either individually or in combination (the hurdle effect), for post-harvest preservation of plant materials and/or accelerating the drying process to produce dehydrated fruit. Studying these technologies involves examining the microbiological, rheological, optical, antioxidant, and micro- and ultrastructural properties of plant tissues. A new line of research that uses biological control agents in combination with UV-C light to reduce the fungal deterioration of strawberries has recently been incorporated into the study. Other collaborations include evaluating the mechanical properties of gluten-free bread and studying the use of allulose as a sucrose replacement in various food products.
