Dr. Justyna Libera is a researcher and lecturer at the University of Life Sciences in Lublin, where she is a member of the Department of Dietetics, Faculty of Food Science and Biotechnology. In 2017, she received her PhD in Food Technology and Nutrition. Since 2011, she has taught courses in dietetics, food technology, and human nutrition. Her research focuses on the relationship between nutrition and human health, functional foods, food technologies with potential health benefits, including probiotic-based products, and the use of food by-products and waste-derived ingredients to improve the nutritional and functional quality of food. She has authored and co-authored numerous articles published in international peer-reviewed journals, including Foods, Food Science and Technology Quality, Annals of Animal Science, Applied Sciences, International Journal of Environmental Research and Public Health, International Journal of Food Science & Technology, Sustainability, and Journal of the Science of Food and Agriculture. Her research interests encompass dietetics and food technology, functional food design, sustainable approaches to food processing, and the development of food products with a focus on nutritional and health-promoting properties.
