Dr. Heikki Aisala has a PhD in food chemistry, with the main expertise in sensory science and flavour chemistry. He has been studying the sensory properties and the underlying chemistry of various food matrices such as wild mushrooms, fish products, cereals, beer, and ingredients based on cellular agriculture.
