The level of self-provision of the population of the Russian Federation with milk and dairy products is one of the key indicators of the food security state. However, the current value of this criterion is lower than the necessary one. In this regard, the issue of increasing domestic products competitiveness, the new products development alongside with traditional ones with new consumer properties is acute. The ultrafiltered cottage cheese is among these products. This article is devoted to the automation of its production. It describes the main technological stages of obtaining cottage cheese. The membrane equipment used in the project is described. The detailed requirements to the information functions of the automated process control system and to the automatic control systems are given. The composition of information and executive channels is described. The technical means used in the project are listed. The effects of implementing the proposed automation project are described.

The use of membrane technologies in industry is considered. The membrane apparatus with the removal of the diffusion boundary layer is evaluated. The methods of mathematical modeling are analyzed, allowing to describe membrane processes. A modeling technique based on transfer functions that takes into account the influence of the most significant disturbing effects on the object under study is developed, and a transfer function in general is proposed. The methods of calculation of membrane installations of periodic and continuous action of various types are presented. The developed methodology and its software implementation optimizes the calculations of the main performance indicators of membrane equipment and allows you to determine a rational hardware layout diagram of membrane devices in order to maximize the extraction of target components from raw materials and reduce its content in the wastewater of the enterprise.

The article discusses the main advantages of the effective use of membrane technologies in industrial production. The key directions of development of membrane technology, their advantages and disadvantages are given. Various approaches are considered in the design of membrane devices. Methods of mathematical modeling are proposed. They allow analyzing various technological processes. A modeling technique based on transfer functions has been developed. This technique takes into account the influence of the most significant disturbing actions on the object under study. A transfer function in its general form has been constructed. The discrepancy between experimental and theoretical data does not exceed 10%, which indicates the adequacy and sufficient prognostic ability of the mathematical model. It makes it promising for the industrial equipment design.
