Chorpaka Thepthanee is a Ph.D. student in the Department of Food Science, National Pingtung University of Science and Technology (NPUST). She is working on bioactive compounds from the natural products, polyphenols, which are found in colored plants that offer various health benefits. She focuses on finding biological activities, including antioxidant, anti-inflammatory, and anticancer activities, of different pigmented rice and black rice leaf extracts. She is interested in conducting molecular studies such as DNA, RNA extraction, as well as real-time PCR techniques, in the future. Furthermore, she is also interested in developing new nutraceuticals and functional foods not only from rice but also rice byproducts including rice straw, rice husk or hull, and rice bran.
