Eirini finished her Bachelors in Molecular Biology and Genetics (Democritus University of Thrace, Greece) with an inspiring internship in Biochemistry at Erasmus Medical Centre (Rotterdam, NL). Willing to explore the potential and gain knowledge in Analytical Chemistry, she pursued her Master’s in Analytical Biosciences in Leiden Academic Centre of Drug Research (Leiden, NL), where she got introduced to the exciting field of Metabolomics where she wanted to dive in, combining her passion about plants and food applications. Having started as a PhD student at Wageningen University & Research in November 2018, she is exploiting the potential of advanced metabolomics tools to explore and investigate the flavour of asparagus, contributing in the development of sustainable high-quality plant-based food ingredients.
