Dr. Gordana Šelo, PhD, is a postdoctoral researcher at the Faculty of Food Technology Osijek. She earned her doctorate in food technology, focusing on the valorization of winery by-products through solid-state fermentation to improve the recovery and extraction of phenolic compounds. Her research centers on phenolic compounds and their potential applications in the food and pharmaceutical industries. Dr. Šelo has participated as a researcher in numerous EU-funded scientific projects and has authored and co-authored a range of scientific publications. Her work is driven by the development of innovative approaches to by-product utilization and contributions to advancing the circular bioeconomy.
