I hold Bachelor’s and Master’s degrees in Food Science and Technology from Kangwon National University, South Korea, and a Ph. D. degree in Applied Marine Biosciences from Tokyo University of Marine Science and Technology. My research field is food engineering and structural analysis of biopolymers. I have been investigating the structure of biomaterials using macroscopic & microscopic structure analysis (NMR spectroscopy, dynamic rheometry, texture analysis, and particle tracking)
