I am Mustafa Güzel, Ph.D., a food microbiologist and academic based in Türkiye. My research focuses on genome-based characterization of foodborne pathogens and microbial communities in fermented and processed foods, with particular emphasis on antimicrobial resistance, mobile genetic elements, and stress adaptation and persistence in food matrices. I integrate comparative genomics, metagenomics, and functional assays to support evidence-based intervention strategies, including bacteriophages, bioprotective cultures, and process controls. I have authored peer-reviewed publications and book chapters in food microbiology and microbial biotechnology and contribute to collaborative research networks in food safety and microbiome science.
