Metabolic syndrome is the pathological basis of cardiovascular and cerebrovascular diseases and type 2 diabetes. With the prevalence of modern lifestyles, the incidence of metabolic syndrome has risen rapidly. In recent years, marine sulfate polysaccharides (MSPs) have shown positive effects in the prevention and treatment of metabolic syndrome, and they mainly come from seaweeds and marine animals. MSPs are rich in sulfate and have stronger biological activity compared with terrestrial polysaccharides. MSPs can alleviate metabolic syndrome by regulating glucose metabolism and lipid metabolism. In addition, MSPs prevent and treat metabolic syndrome by interacting with gut microbiota. MSPs can be degraded by gut microbes to produce metabolites such as short chain fatty acids (SCFAs) and free sulfate and affect the composition of gut microbiota. The difference between MSPs and other polysaccharides lies in the sulfation pattern and sulfate content, therefore, which is very important for anti-metabolic syndrome activity of MSPs. This review summarizes the latest findings on effects of MSPs on metabolic syndrome, mechanisms of MSPs in treatment/prevention of metabolic syndrome, interactions between MSPs and gut microbiota, and the role of sulfate group and sulfation pattern in MSPs activity. However, more clinical trials are needed to confirm the potential preventive and therapeutic effects on human body. It may be a better choice to develop new functional foods containing MSPs for dietary intervention in metabolic syndrome.

The effect of commercial processing methods on the nutritional value of ready‐to‐eat (RTE) sea cucumber Apostichopus japonicas was examined in this study. RTE sea cucumber products named RTE‐T and RTE‐V were prepared by two commercial methods, traditional processing, and vacuum cooking, respectively. Proximate, polysaccharide and mineral element composition, amino acid profiles, and true retention values of RTE sea cucumber products were evaluated and compared. Both commercial processing methods significantly changed the nutrient composition in RTE products, except that of Zn and Cu. Comparison of true retention values among RTE products showed that novel commercial method of vacuum cooking resulted in lower nutrient loss and had a shorter processing time than traditional processing. However, soaking after vacuum cooking significantly increased the nutrient loss of RTE sea cucumber. Therefore, vacuum cooking without soaking may be a promising alternative for producing RTE sea cucumber products with high nutritional quality.

Effects of different phenolic compounds on the redox state of myoglobin and their potential for preserving the color and chemical quality of refrigerated longtail tuna (Thunnus tonggol) slices were studied. Purified myoglobin from dark muscle (15.83 kDa) was prepared. Catechin, EGCG, quercetin, and hyperoside affected the absorption spectra and redox state of metmyoglobin (metMb) at 4 °C for up to 72 h differently. Reduction of metMb to oxymyoglobin (oxyMb) was notably observed for two flavonols (EGCG and quercetin) at 50 and 100 ppm. Based on the reducing ability of metMb, EGCG and quercetin were selected for further study. Longtail tuna slices were treated with EGCG and quercetin at 200 and 400 mg/kg. Color (a* and a*/b*), proportion of myoglobin content, and quality changes were monitored over 72 h at 4 °C. Tuna slices treated with 200 mg/kg EGCG showed better maintenance of oxyMb and color as well as lower lipid oxidation (PV and TBARS) and protein oxidation (carbonyl content) than the remaining samples. Nevertheless, EGCG at 400 mg/kg exhibited lower efficacy in retaining the quality of tuna slices. Thus, EGCG at 200 mg/kg could be used to maintain the color and prolong the shelf life of refrigerated longtail tuna slices.

This study aimed to evaluate the immunomodulatory effect of the polysaccharide from Sinonovacula constricta (SCP‐1‐1) in RAW264.7 cells. SCP‐1‐1 with a molecular weight of 440.0 kDa consisted of glucose and mannose. The immunomodulatory assay results showed that SCP‐1‐1 could significantly enhance phagocytic ability, NO production, and some cytokines (TNF‐α, IL‐6, and IL‐1β) secretion of RAW264.7 cell in a dose‐dependent manner. Western blot analysis results demonstrated that SCP‐1‐1 could regulate the expression levels of the key proteins in the signaling pathways of RAW264.7 cell and might associated with NF‐κβ and PI3K signaling pathway. These findings could contribute to elucidate the immunomodulatory activities of the polysaccharide from Sinonovacula constricta.

The sea cucumber (Apostichopus japonicus) is a high-priced and appreciated food. Output of cultured sea cucumber has been increasing in China. From a nutritional point of view, there is still limited data on the chemical composition of cultured sea cucumber from pond and cage aquaculture. Therefore, the nutritional value of sea cucumber from 4 important aquaculture regions of Dalian, Yantai, Qingdao, and Putai in China were evaluated in the present work. The proximate composition, except for protein, and the profiles of amino acid and fatty acid were significantly different among the aquaculture regions, especially, saturated fatty acids (SFA), monounsaturated fatty acids (MUFA), and polyunsaturated fatty acids (PUFA). The cultured sea cucumbers were rich in glutamine (66.90–71.60 g kg−1), glycine (54.30–58.90 g kg−1), and leucine (29.20–32.40 g kg−1) and showed a high content in PUFA (35.26%–46.47%), especially eicosapentaenoic (EPA, 10.04%–16.04%). All cultured sea cucumber have the recommended essential amino acid/total amino acid (0.33–0.35), lysine/arginine (0.66–0.74), and n-6/n-3 ratio (0.52–1.88) for good health status of humans and very low level of atherogenic and thrombogenic indices (0.20–0.36 and 0.21–0.29, respectively). The results indicate that the cultured sea cucumber has a nutritional value perfectly compatible with nutritious and healthy diets
