Maria João Carneiro is Assistant Professor at the University of Aveiro (Portugal) and researcher at the Governance, Competitiveness and Public Policies Research Unit. She holds a PhD in Tourism and a Degree in Tourism Management and Planning, both from the University of Aveiro, and an MBA from the New University of Lisbon. Her research interests include consumer behaviour in tourism and competitiveness of tourism destinations. She published several book chapters and papers in international journals.
Wine tourism experiences promote not only rural territories’ distinctive wine and food products, but also their local identity, natural and cultural resources and historical features that add value and uniqueness to tourist experiences. The new experience paradigm applied to tourism invites stakeholders to rethink how and why tourists travel and live their experiences on holidays. Interaction and engagement are components of co-creation, stressing the central role of visitors sharing value creation with other destination stakeholders. The present qualitative study uses discourses from 22 semi-structured in-depth interviews with visitors to Portugal’s Bairrada wine region. Content analysis, carried out with QRS Nvivo 12, shows that interaction enhances wine and food experiences in several contexts. Storytelling seems to contribute to value creation, with stories co-created between winemakers or other destination stakeholders and visitors. Apart from this social interaction, visitors’ physical interaction with natural and cultural destination features is also revealed as a crucial part of wine tourism experiences. Study results suggest the importance of DMOs, facilitating co-creation experiences in wine regions, contributing to visitor satisfaction and loyalty.

Travel has become a synonym of living memorable and enjoyable experiences. Co-creation centralizes tourists’ role in the creation of value that results from the interaction with other destination stakeholders and the physical environment. Within the wider destination experience, the growing interest tourists show regarding the food and wine experience is notorious, due to its distinctive, multisensory and engaging nature. However, conceptual and empirical studies on co-creation of experiences in food and wine contexts are still scarce. To address this gap, this conceptual study presents an integrative literature review of 118 articles focusing on co-creation in tourism experiences, aiming at understanding what conceptual and empirical studies have been developed in the field, and identifying the most representative dimensions of tourism co-creation, both in general tourism experience and in food and wine experiences, in particular. Based on study findings, a critical analysis is presented along with a novel framework and definition of co-creative tourism experiences, with particular relevance to food and wine tourism. Key dimensions of co-creation in food and wine experiences, namely interaction, engagement, participation and personalization, are identified as relevant for promoting involving and immersive experiences. Theoretical and managerial contributions to destination managers and local stakeholders are also discussed.

This study intends to examine the web accessibility of three tourism supply agents (hotels, travel agents and museums). The results obtained contribute to observing whether there are differences in levels of web accessibility among these tourism supply agents and, based on the problems identified, suggest strategies to overcome these problems. To evaluate the level of web accessibility of tourism supply agents, two automatic online tools (AccessMonitor and TAW), which consider Web Content Accessibility Guidelines (WCAG), version 2.0, were used. To identify differences among the supply tourism agents in terms of the level of web accessibility, statistical tests (ANOVA and Kruskal–Wallis) were used. All the tourism supply agents analysed reveal considerable problems related to web accessibility. The perceivable and robust principles are the two principles of WGAG 2.0 with the greatest number of failures. However, differences among the supply agents analysed are observed. Museums present the highest level of web accessibility, while travel agents have the lowest. Therefore, it is necessary to implement improvements in tourism websites to overcome informational constraints that many people with disabilities (PwD) face in tourism activities. Due to the central role of the Internet for people with and without disabilities, this study highlights barriers that should be eliminated to facilitate the travel decision-making process, especially for PwD. Consequently, it can contribute to a greater number of people being able to participate in tourism activities, improving their well-being and rehabilitation.

Air quality is a topic with growing interest within the tourism industry, especially for destinations with a high volume of tourism. Several implications on tourism demand are already recognised, such as influence on health and well-being, travel behaviour and trip satisfaction. However, there is a knowledge gap concerning its influence on tourism decision making. To overcome this gap this study intends to examine the relevance of destinations’ air quality on tourism decision making before and during tourism trips. A qualitative study was carried out based on in-depth interviews with visitors from different cultural backgrounds and with different health conditions. A content analysis was undertaken to find the major references regarding the topic and to establish a comparative analysis. The results demonstrate a lack of concern regarding air quality in specific dimensions of travel planning. Nevertheless, when visitors are confronted with episodes of air pollution at the destination, they tend to adopt adaptive strategies to prevent negative effects. Differences were found between groups from different places of residence and between individuals with or without health problems. The paper ends with guidelines for those developing recreation and tourism activities concerning the relevance that should be assigned to air quality in the development of these activities.

The pandemic caused by coronavirus SARS-CoV-2 (associated to the disease named COVID-19) is having a global impact that affects health, the economy and the environment. These impacts are negative in most of the sectors but benefits also occurred in specific fields. Tourism was one of the most negatively affected economic sectors, and in terms of benefits, the improvement of air quality can be highlighted, with positive health implications. This paper aims to evaluate the impacts on these two particular fields—tourism and air quality—focusing on Portugal due to the relevance of tourism in the country. The research carried out in this paper enables us to find the most critical areas and identifies lessons learnt and recommendations for the post-COVID period. Tourism and air quality data were collected for both 2019 and 2020 and compared in terms of quantitative and spatial analysis. The Lisbon metropolitan area—the geographical area where the capital of the country is located—was the area that suffered the most negative impacts in terms of tourism activity but was also the one where highest benefits in terms of air pollution reduction and human exposure were felt. Recommendations for future strategies are suggested, including new concepts of tourism connected to the environment; the investment in online/virtual tourism activities; promotion of the domestic market; mitigation of the over-tourism problem and using environmental issues, such as air quality, as new attractiveness criteria for tourism destinations.

Air quality (AQ) is gaining considerable visibility within the tourism sector. However, despite several studies analysing the impact of tourism activities on the AQ of destinations, little is known about the inverse relation. This paper analyses the role of AQ on travel planning and the factors influencing it, specifically the influence of environmentally friendly daily behaviours and concerns with AQ impacts on visitor health. To accomplish this, a questionnaire survey (N = 834) was carried out to visitors. Two Principal Component Analysis (PCA) and two multivariate regression models were used to identify the factors influencing the role of AQ in travel planning. Results reveal that despite AQ not having a substantial role in travel planning of tourism activities, the environmentally friendly daily behaviours of visitors have a positive influence on the role of AQ in travel planning. The paper ends with some theoretical and practical implications.

A multiplicity of online information sources are used to plan, book, evaluate and share tourism experiences. However, a limited number of studies examine the online information sources used by the accessible tourism market. To extend knowledge in this field the present study analyses the heterogeneity in the Portuguese accessible tourism market regarding online information sources used, applying a survey to 504 people with special needs (PwSN). Six segments with different types of special needs (people with hearing disabilities – PwHD -, people with visual disabilities – PwVD -, people with motor disabilities – PwMoD -, people with mental disabilities – PwMeD -, people with multiple disabilities – PwMuD and people with other special needs – PwOSN) that had participated in tourism activities are studied regarding the information sources used in a tourism trip. Results highlight the relevance of the Internet as one of the most important information sources to plan a tourism trip. However, differences among the six segments were observable. Moreover, results reveal the need to provide accessible information sources to increase the participation of PwSN in tourism activities.

Museums play a major role as tourism attractions worldwide. Nevertheless, and despite the increasing awareness of the need to improve accessibility for people with disabilities in tourism, museum websites are still identified by this group as a major constraint for visiting and having pleasurable experiences in museums. Despite the existence of constraints in this scope, empirical research that examines the accessibility of museums websites is very scarce with only one study being known in this field. Even this study only considers a small set of museums in one region of the United States and adopts a non-automatic, and thus subjective procedure, not enabling great conclusions about the accessibility of these museum web platforms. The present paper aims to fill some of the previous gaps by assessing the accessibility of websites of museums located in Portugal. To achieve this aim, a total of 575 websites of museums located across different regions were assessed using two automated tools based on the Web Content Accessibility Guidelines: AccessMonitor and Test de Accesibilidad Web. Results reveal that although websites of museums present higher levels of accessibility than those of other tourism supply agents, they still have several accessibility problems that must be solved. Findings also show that there is a higher prevalence of failures related to the ‘perceivable’ and ‘robust’ principles, and that the accessibility level differs among the NUTS II regions where museums are located. The paper ends by identifying the main conclusions and the major implications for designers or managers of these websites.

Architectural heritage has great potential to motivate visits to some tourism destinations. The literature suggests that interpretation may contribute to expanding knowledge of cultural heritage and positively influence the formation of the cognitive image of this heritage. However, empirical evidence on the influence of interpretation of architectural heritage, both on learning and on image creation, is scarce and limited in scope. This paper aims to extend previous research by analysing the influence of interpretation on learning and on perceptions of the cultural significance of architectural heritage. It focuses on visitors to two buildings, located in the Portuguese town of Aveiro, already considered important tourism attractions. The study is based on a questionnaire survey and on an experimental method involving the creation of brochures about the buildings under analysis. The findings suggest that interpretation may contribute to learning about and recognition of the cultural significance of architectural heritage. The results reveal that visitors who used the brochure created for the study perceived the two buildings to have higher aesthetic value and, in the case of the cathedral, had greater knowledge about the building, compared to those who did not. The paper ends with theoretical and practical contributions to architectural heritage management.

The popularity of re-enactment events has increased worldwide. A conceptual model is proposed, positing that the eventscape of re-enactment events has a positive effect on satisfaction and loyalty by generating emotions, and that different emotions – pleasure and arousal – have a mediating role on the influence of eventscape on satisfaction. The model is tested using Partial Least Squares Structural Equation Modeling (PLS-SEM) and data collected on a popular re-enactment event staged in Portugal. Results reveal that design and entertainment are the dimensions of the eventscape with the highest impact on emotions (both pleasure and arousal), satisfaction, and loyalty. Moreover, pleasure is the only dimension of emotions that has a significant impact on satisfaction and loyalty, as well as a mediating role between eventscape and satisfaction. In contrast, arousal does not have a direct and mediating effect. The study provides important contributions and guidelines for managing re-enactment events.

The supply of enriching tourism experiences is a crucial factor for the competitiveness of tourism destinations. Satisfying encounters among visitors and between hosts and visitors can have an important role creating rewarding and memorable tourism experiences. The youth tourism market is a very important tourism segment that is in the beginning of a long travel career. However, the literature regarding the intensity and nature of social encounters in this market is very limited. Moreover, few studies analyse the factors influencing the intensity of social encounters of visitors with hosts and other visitors during a trip and the outcomes of these encounters. This paper extends the literature in this field analysing the relationship between travel motivations, intensity of encounters and outcomes of these encounters in the youth tourism market. A questionnaire survey was carried out among the students of a Portuguese university (N = 399). Principal Component Analysis (PCA) and Partial least squares structural equation modelling (PLS_SEM) were used. Results reveal that the interaction of young visitors with host and other visitors during tourism trips is still low. Motivations are important determinants of these interactions, with motivations to increase knowledge being the most likely to induce interaction. Nevertheless, close interactions with visitors and contacts with residents to obtain information are the most powerful in increasing positive outcomes of interaction. Findings also remark that the intensity of interaction has more impact in increasing the positive outcomes of the interaction than in decreasing the negative ones. The paper ends with some theoretical and practical implications.

Rural tourism may contribute to sustainable destination development but the realisation of this potential depends largely on the type and behaviour of the tourists attracted. Therefore, market knowledge, segmentation studies and management of demand, in accordance with sustainability-yielding territorial development goals, are needed. The present study segments the market of visitors of Portuguese villages using scales reporting environmentally, culturally, socially and economically sustainable travel behaviour. Data was collected through a one-year, on-site survey of 786 village visitors. Responses on sustainability-reflecting items were used in a hierarchical cluster analysis resulting in a three-cluster solution with diverse sustainability-impacting behaviours. One segment reveals higher concern with environmental and cultural heritage, another presents the overall most sustainable behaviours, greatly contributing to sociocultural and economic development, while a third group reports globally less sustainable behaviours. The three clusters also differ on socio-demographics, information sources used, travel behaviour, place attachment, satisfaction and destination loyalty. Interestingly, those showing more sustainable behaviour present higher levels of satisfaction and loyalty. This market knowledge permits an evaluation, selection and targeting of tourist segments yielding more sustainable destination development.

Tourism has a great potential for enhancing residents’ quality of life (QOL). Nevertheless, a limited number of studies have been carried out in this field. In order to overcome this gap this chapter aims to analyse the heterogeneity of residents of tourism destinations regarding perceptions of tourism impacts on several dimensions of their QOL. A survey of residents of two coastal communities located in the Central region of Portugal (Barra and Costa Nova) was undertaken in 2012 (N = 288). Two Principal Component Analyses (PCAs) were carried out to identify the dimensions both of tourism impacts on QOL and of host-tourist interaction. A hierarchical cluster analysis was carried out based on the dimensions of tourism impacts on QOL. Anova, Kruskal-Wallis and Chi-square tests were used to compare the clusters identified. Results reveal that tourism has a considerable impact on residents’ QOL and that the residents’ communities are heterogeneous regarding the perception of tourism impacts on several dimensions of QOL. Three clusters emerged: Cluster 1 – The most benefited (N = 34.4%); Cluster 2 – The quite benefited (N = 49.7%); and Cluster 3 – The least benefited (N = 16.0%). Statistical significant differences were detected among the clusters regarding several dimensions of host-tourist interaction, place of residence and satisfaction with several issues. Host-tourist interaction emerges as one of the factors with higher positive influence on the perceptions of tourism impacts on residents’ QOL. The chapter ends with some contributions to the development and marketing of tourism destinations.

Tourism is considered a potential tool for developing rural territories which are increasingly affected by loss of economic opportunities and, consequently, some social problems such as depopulation and population ageing. Rural tourism lifestyle entrepreneurs are tourism business owners actively seeking a different lifestyle in rural territories. This chapter presents a discussion of the role and contributions of lifestyle entrepreneurs in rural tourism to the development of the respective territories and the impact of the entrepreneurial activity provoked by this particular type of business owners. A systematic literature review was complemented by the results of a case study carried out in the Alto Alentejo, a rural region in the southern inner part of Portugal. The results considered here were part of a broader qualitative in-depth research. The impacts of entrepreneurial activity may be found, among other aspects, in the maintenance of links with the land and property, the preservation of traditional food and job creation for entrepreneurs and their families and the creation of ‘social capital’ essential to the sustainability especially of small and rural communities.

Rural tourism is driven by the search for unique and memorable experiences in particular settings, but knowledge on visitors’ experiences in rural destinations is still scarce. This paper analyzes the rural tourism experience of Portuguese tourists who answered an online survey (N = 252). The paper aims at validating, in the rural tourism context, a previously proposed tourist experience scale, and analyzing the relationships between the experience, arousal, memory, and satisfaction. Results reveal that the rural tourism experience dimensions of education and esthetics positively predict rural tourists’ arousal, whereas escapism and esthetics determine memorability. Finally, implications for rural tourism marketing are discussed.

As a result of a well-debated set of transformations, rural areas are increasingly perceived as consumption rather than productive places, mainly associated to leisure and tourism. This paper aims to analyse the heterogeneity of domestic tourism consumption of rural areas. Based on a cluster analysis derived from a sample of the Portuguese population (N = 866) four clusters based on activities carried out in Portuguese rural areas were obtained – The Active Visitors, The Passive Nature Observers, The Inactives and The Summer Family Vacationers. These clusters of domestic market show diversity in the ways rural areas are perceived and consumed. They also differ regarding familiarity with rural areas, travel behaviour and sociodemographic profile. Results reveal the importance of offering different rural tourism products to these groups, thereby improving rural destination management and marketing.
