Purpose of current study was to determine physicochemical, triglyceride composition, and functional groups of wild adlay accessions (brown, black, yellow, grey, green, off white, and purple) to find out its scope as cereal crop. Triglycerides, minerals and functional groups were determined through Gas chromatography, spectrophotometer and Fourier Transform Infrared (FTIR) spectrophotometer respectively. Results revealed variation among bulk densities, specific densities, percent empty spaces, and corresponding grain counts per 10 g of sample are useful in distinguishing brown, black, yellow, grey, green, off white, and purple wild adlay accessions. Specific density and grain count per 10 g sample was significantly related. No statistical relationship exists among the pronounced physical characteristics. Brown adlay expressed the highest protein, fat, and fiber contents 15.82%, 4.76% and 2.37% respectively. Protein, fat, ash, and fiber percent contents were found comparable to cultivated adlay. Spectrophotometric analysis revealed macro elements including phosphorus, potassium, calcium, and sodium in the range 0.3% - 2.2% and micro elements boron, iron, copper, zinc, and manganese in the range 1.6 mg/kg - 20.8 mg/kg. Gas chromatography showed polyunsaturated fatty acids (PUFA) constitute the primary fraction (39% ± 7.2) of wild adlay triglycerides. Linoleic and palmitic acids were present as prominent fatty acids, 43.5% ±1.4 and 26.3% ±1.4 respectively. Infra-red frequencies distinguished functional groups in narrow band and fingerprint region of protein in association with out of plane region leading to structural differences among adlay accessions. Comparison of major distinguishing vibrational frequencies among different flours indicated black adlay containing highest functional groups appeared promising for varietal development.

Wheat based products are consumed as staple food in most the of Asians countries, hence different wheat cultivars are purposely developed to meet the diverse ecological conditions. These cultivars carry difference in their rheometry nutrition and gluten microstructure that affect the overall product quality. In the present investigation ten wheat varieties were selected from two most common ecological zones i.e. rain fed and irrigated. In general, non-significant differences were observed in most of nutritional parameters however, tremendous variations were studied in rheometry and functional features. More than fifteen parameters were linked through Principal Competent Analysis (PCA) which has segregated the cultivars in to four groups. Analyses of secondary structure of gluten were also analysed through Fourier Transform Infrared spectroscopy (FTIR) and hierarchical cluster for FTIR gluten structure divided wheat cultivars in three groups. Results revealed that wheat cultivars (Borlog-2015 and Zincole-2016) having high protein contents (15%), more water absorption capacity (72.0%), dough development time (11.2 min), stability time (15 min) and mixing tolerance index (11.0 min) made their own cluster and showed variable spectra estimated between the 1750 to 1500 cm-1. On the bases of findings of both PCA model and clustering of FTIR proteins, it was revealed these two cultivars are suited for bread making. In contradiction to above features other two cultivars (Pirsabak-2005 and Wafaq-2001) were found good for making biscuits.

Cookies are an exceptional energy source due to their elevated fat and carbohydrate content. Beyond their delectable taste, they are also rich in essential nutrients, including valuable proteins and minerals. This study evaluated the potential of the wheat variety NARC‐2011 for cookie production, focusing on nutritional enhancement by adding white sesame seeds at different proportions (5%, 10%, and 15%) to both whole and fine wheat flour. White sesame seeds were added to cookies mainly for their visual appeal, creating a nice contrast with the dough. They also have a mild flavor that complements the cookie without overwhelming it. Besides, they pack essential nutrients like protein, fiber, calcium, and iron, making the cookies more nutritious. The physical, chemical, and sensory properties of the different cookies were evaluated using standard methods. In terms of physical parameters, fine wheat flour cookies exhibited a diameter (46.45–50.47 mm), thickness (8.47–9.77 mm), and spreading factor (5.16–5.46 mm), and whole wheat flour cookies exhibited a diameter (48.47–52.31 mm), thickness (9.22–10.73 mm), and spreading factor (4.87–5.25 mm). Chemical analysis revealed moisture (5.78%–7.66%), fat (10.89%–16.16%), fiber (6.10%–8.46%), ash (4.82%–7.40%), protein (0.74%–1.40%), non‐fiber carbohydrates (63.67%–67.55%) for fine wheat flour cookies, and moisture (5.67%–7.39%), fat (10.89%–16.16%), fiber (11.47%–15.98%), ash (0.54%–0.83%), protein (5.65%–8.13%), non‐fiber carbohydrates (57.86%–66.55%), total phenolic content (2.86 mg/g), flavonoids (1.46 mg/g), and antioxidant activity (80.76%) in whole wheat flour cookies with sesame fortification. Gas chromatography revealed higher unsaturated fatty acids (83.22%) in NARC‐2011 wheat oil compared to white sesame seed oil (79.78%). In sensory evaluations, cookies fortified with 10% sesame seeds in fine wheat flour received the highest level of acceptability from the panelists. On the other hand, cookies made from whole wheat flour fortified with 15% sesame seeds garnered the maximum acceptability ratings from the panelists. In conclusion, supplementing NARC‐2011 wheat flour with sesame seeds, whether in fine or whole wheat form, improves the quality of cookies and nutritional content while offering appropriate sensory attributes at particular sesame seed levels.

Cultivated adlay or Job’s tear (Coix lacryma-jobi L.) is an important food crop having numerous therapeutic and nutraceutical health benefits. Our study aimed to determine nutrients, minerals, fatty acid composition, and functional groups of seven wild Adlay accessions (brown, black, yellow, grey, green, off-white, and purple) to find out their scope as cereal crops using simple, rapid, and modern analytical techniques. Results revealed variations among bulk densities, specific densities, percent empty spaces, and corresponding grain counts per 10g of sample are valuable characteristics in distinguishing the accessions. Contents of fat, protein, ash, and fibre were found to be comparable to cultivated Adlay. Brown adlay was measured with the highest protein, fat, and fibre contents, 15.82%, 4.76% and 2.37%, respectively. Phosphorus, potassium, calcium, and sodium ranged 0.3% - 2.2%, whereas boron, iron, copper, zinc, and manganese were in the range 1.6mg/kg - 20.8mg/kg. Wild adlay triglyceride composition constituted of polyunsaturated fatty acids as primary fraction followed by olein and palmitic acid as prominent fatty acids. Distinguishing functional groups expressed infra-red frequencies in narrow bands and fingerprint region of proteins associated with out-of-plane region evident structural differences among adlay accessions. Frequency of functional groups in seven accessions indicated black genotype promising for varietal development.
