Polyphenols, the most abundant components in tea, determine the quality and health function of tea. The analysis of polyphenols in tea is a topic of increasing interest. However, the complexity of the tea matrix, the wide variety of teas, and the difference in determination purposes puts forward higher requirements for the detection of tea polyphenols. Many efforts have been made to provide a highly sensitive and selective analytical method for the determination and characterization of tea polyphenols. In order to provide new insight for the further development of polyphenols in tea, in the present review we summarize the recent literature for the detection of tea polyphenols from the perspectives of determining total polyphenols and individual polyphenols in tea. There are a variety of methods for the analysis of total tea polyphenols, which range from the traditional titration method, to the widely used spectrophotometry based on the color reaction of Folin–Ciocalteu, and then to the current electrochemical sensor for rapid on-site detection. Additionally, the application of improved liquid chromatography (LC) and high-resolution mass spectrometry (HRMS) were emphasized for the simultaneous determination of multiple polyphenols and the identification of novel polyphenols. Finally, a brief outline of future development trends are discussed.

We studied changes in plant growth, nutrient absorption, quality of fresh leaves, and the antioxidant enzyme systems of leaves treated with AMF (Glomus etunicatum) in tea (tea cultivar “Xinyang 10”) seedlings exposed to 0 and 100 mmol/L sodium chloride (NaCl). The AMF colonization in the tea roots decreased observably by 50.1% after a 5-week soil NaCl (100 mmol/L) treatment. The growth, leaf nutrient levels, and leaf quality parameter contents significantly declined by 18–39% in the 100 mmol/L NaCl treatments. In contrast, these variables exhibited observably higher responses in the mycorrhizal seedlings than in the nonmycorrhizal seedlings. Furthermore, AMF improved the leaves’ total amino acid concentrations dramatically, accompanied by the upregulation of the genes of the amino acid synthetic enzymes, such as glutamate dehydrogenase (CsGDH), glutamate synthase (CsGOGAT), and glutamine synthetase (CsGS), while 100 mmol/L NaCl seedlings represented a negative performance. In addition, the 100 mmol/L NaCl treatments dramatically downregulated the expression level of the tea caffeine synthase 1 gene (CsTCS1), the ascorbate peroxidase gene (CsAPX), and the 3-hydroxy-3-methylglutaryl coenzyme gene (CsHMGR) in the leaves, while the AMF seedlings represented positive performances. These results suggest that AMF may play an active role in fresh leaf quality via the partial upregulation of the relevant genes’ expression. In contrast, salt stress represented the opposite result in tea. The seedlings inoculated with AMF showed significantly increased antioxidant enzyme activities, by 13.3–19.6%, including peroxidase (POD), catalase (CAT), and superoxide dismutase (SOD), over the non-AMF inoculated tea seedlings. Still, they did not affect glutathione reductase (GR), irrespective of the NaCl condition. Further studies indicated that AMF observably upregulated the genes’ expressions (i.e., CsCAT and CsSOD) in both the 0 and 100 mmol/L NaCl seedlings. Meanwhile, the 100 mmol/L NaCl seedlings represented markedly lower antioxidant enzyme activities (i.e., SOD, CAT, and POD) and gene expressions (i.e., CsSOD and CsCAT) than the non-NaCl seedlings, irrespective of AMF inoculation. These results imply that AMF has a positive role in strengthening salt tolerance and on the quality of fresh tea leaves.

Plant root hairs are cylindrical tubular projections from root epidermal cells. They increase the root surface area, which is important for the acquisition of water and nutrients, microbe interactions, and plant anchorage. The root hair specification, the effect of root hairs on nutrient acquisition and the mechanisms of nutrients (calcium, iron, magnesium, nitrogen, phosphorus, and potassium) that affect root hair development and growth were reviewed. The gene regulatory network on root hair specification in the plant kingdom was highlighted. More work is needed to clone the genes of additional root hair mutants and elucidate their roles, as well as undertaking reverse genetics and mutant complementation studies to add to the current knowledge of the signaling networks, which are involved in root hair development and growth regulated by nutrients.

This study investigated the volatile flavor characteristics of Fujian white tea (FWT), Yunnan white tea (YWT), and GABA-enriched white tea (GWT) using headspace solid-phase microextraction combined with gas chromatography-mass spectrometry (HS-SPME-GC-MS). Cluster analysis and sensory evaluations were employed to compare the relative content changes in volatile compounds and their contributions to freshness-related aroma. A total of 85 volatile compounds were identified, with cis-3-Hexenyl isovalerate, β-Ocimene, and nerol identified as key contributors to the fresh aroma of white tea. Comparative analysis of 2023 and 2024 GABA white tea batches revealed significant differences in volatile compounds, highlighting the role of anaerobic treatment in enhancing freshness and purity. The findings provide theoretical support for optimizing GABA white tea production and advancing functional tea research.

Tea plant can enrich a large amount of fluorine (F) in the cell wall of its mature leaves, thus posing the risk of excessive intake of F for tea consumers. This study investigated the effect of foliar calcium (Ca) application (0.05-1 mM) on F accumulation in tea plant leaves by analyzing the association of F with cell wall materials, pectin methylesterification structure, and cell wall genes. Ca spray could effectively reduce the F level, the content of wall carbohydrates (excluding the chelate pectin fraction) and the pectin methylesterification degree in tea plant leaves. Correlation analysis further revealed that the tea leaf F content was positively correlated with most of the cell wall materials. Transcriptomics analysis indicated that the key genes involved in reorganization of cell wall polysaccharides (such as CslE6, XTH32, PG, PGIP, PME18, PMEU1, and PMEI9) were associated with the variations in F content and cell wall components. All the results suggest that Ca may lessen the tea leaf F level by reducing the accumulation of cell wall materials and intervening the cell wall structure and gene expression. This study provided useful information for reducing the F level and solving the F safety problem in tea plant.
