Dr. Inmaculada Mateos-Aparicio is a Professor of the Department of Nutrition and Food Science in the degrees of Pharmacy, Food Science and Technology, and Human Nutrition and Dietetics. She is a member of the ALIVEF UCM research group and is dedicated to the valorisation of vegetable by-products and the improvement of their bioactive profile through the application of green technologies. Her scientific performance is specified in numerous indexed articles, mostly in Q1 and various book chapters. She has participated in more than 20 competitive projects and contracts with companies. She is the author of several patents. She has participated in national and international conferences through numerous oral communications and posters. She has supervised PhD theses with cum laude mention, Master’s theses, and Final Degree projects. She is the coordinator of Pharmacy PhD and the External Practices coordinator of the Master’s in Food Safety. She received teaching excellence from 2015–2018 and 2019–2022. She has led teaching innovation projects since 2014 with a high number of published teaching articles. Furthermore, Dr. Mateos-Apariico is a member of the Spanish Society of Microbiota, Probiotics and Prebiotics (SEMiPyP) and one of the authors of the first scientific consensus on prebiotics.
