Javier Fontecha is Permanent Scientific Researcher at the Institute of Food Science Research (CIAL-CSIC) in Madrid, Spain. He is the head of the Food Lipid Biomarkers and Health group. His research interests include improvements in the nutritional characteristics of the lipid fraction of foods (especially dairy products) and their relation with human health (studies of obesity, cardiovascular disease, and cognitive development). He is carrying out in vitro and in vivo dietary interventions in close
collaboration with other groups and hospitals.
