Biography
Dr. Joan M. King has more than 30 years of experience as a food chemist in ingredient development, discovery and testing, including oxidative processes, non-chemical starch modification and product applications. Dr. King has studied methods for altering starch functionality and on developing resistant starches. Dr. King has had over 70 refereed articles, 7 book chapters, 4 US patents (2 on resistant starch development) and three license agreements, and over 80 presentations.
