Fusarium head blight is a destructive disease of cereals worldwide. The aim of this research was to study the effect of heavy Fusarium infection with Fusarium culmorum and biosynthesis of mycotoxins on different wheat varieties during malting by setting up field trials with control and Fusarium-inoculated treatments at the Agricultural Institute Osijek. The highest occurrence of Fusarium mycotoxins was expectedly recorded in susceptible variety in grain and malt (3247 and 1484 µg kg−1 for deoxynivalenol (DON), 735 and 1116 µg kg−1 for 3-acetyl deoxynivalenol (3-ADON), 37 and 233 µg kg−1 for zearalenone (ZEN), respectively). Based on published information, complemented by our own results, the following conclusions can be drawn: The presence of 3-ADON in different wheat varieties might be the result of its conversion into DON by deacetylation during the malting process. The detection of the mycotoxin ZEN indicated that this mycotoxin is only specific for wheat malt.

Fullerol C60(OH)24 nanoparticles (FNP)-wheat-A. flavus interaction outcome is more complicated in the presence of drought. This study sheds light on how the presence of FNP affects food and feed safety from the perspective of mycotoxin contamination. The study aims to determine the influence of FNP at environmentally plausible concentrations on wheat growth under drought stress and on the aggressiveness of A. flavus during wheat germination, as well as the influence of FNP on the secondary metabolite profile during the inappropriate wheat storage. The co-occurrence of drought and FNP inhibited germination and shoot growth, while an application of FNP alone had no negative effect on plant growth. Wheat pre-treated with FNP showed a concentration dependent resistance pattern to A. flavus aggressiveness. Nevertheless, using a LC-MS/MS based multi-mycotoxin method, six secondary fungal metabolites: 3-nitropropionic acid (<LOD −775.7336 ± 10.7752 ng mL−1), aflatoxin B1 (<LOD −6.78 ± 0.43 ng mL−1) and B2 (<LOD −0.07 ± 0.00 ng mL−1), aflatoxicol (<LOD −0.37 ± 0.16 ng mL−1), kojic acid (<LOD −1337.87 ± 189.04 ng mL−1), and O-methylsterigmatocystin (<LOD −0.17 ± 0.00 ng mL−1), were detected. FNP affected secondary metabolism of A. flavus during inappropriate wheat storage and increased the concentration of secondary metabolites in a concentration-dependent pattern (3-nitropropionic acid and kojic acid). In addition, aflatoxicol production was provoked in FNP treated samples.

The environmentally friendly, physical method of high voltage electrical discharge (HVED) was developed to improve the drought and salinity tolerance of two wheat genotypes. Unlike other plasma technologies, HVED treatment involves the discharge of electricity in water. In this study, the effect of HVED pretreatment on wheat germination and early vegetative growth under drought (0%, 15%, 20% and 30% PEG) and salinity (0, 90, 160 and 230 mM NaCl) stress conditions was investigated. HVED-exposed seeds showed altered seed surfaces and became more permeable to water uptake, resulting in higher germination percentages, germination index values, and shoot and root growth under the control and all drought and salinity concentrations. Moreover, the electrical conductivity of the water medium increased significantly, indicating HVED-induced reactions of ionization and dissociations of water molecules occurred. In addition, HVED pretreatment in the salt experiment improved the tolerance index values of the shoots and roots. The most pronounced genotypic variations occurred under the highest stress levels (30% PEG or 230 mM NaCl) and varied with the stress intensity and growth stage. The study results indicate that HVED pretreatment has the potential to improve drought and salt tolerance in wheat.

Cabbage is an important source of bioactive compound, which is available throughout the year. However, a lot of different traditional, and hybrid varieties with different levels and composition of bioactive compounds can be found on the market. The aim of the study was to obtain quantitative results showing comparative differences between different white cabbages (“Čepinski”, “Varaždinski”, “Bravo”, “Ogulinski”) from Croatia. Morphometric parameters and physicochemical composition were determined while using standard procedures. Phenolic acids were determined using high-performance liquid chromatography and volatile compounds were analysed by the solid-phase micro-extraction gas chromatography with mass spectrometry (SPME-GC-MS) smethod. The results showed that studied cabbage cultivars differed in physicochemical composition and morphological traits. Six phenolic acids were identified and quantified, whereas a sinapic acid was the most dominant component (65.9–78.15 mg/kg). Aldehydes, esters, alcohols, and terpenes were the major classes of organic volatile compounds present in the studied cabbages. “Čepinski”, which has never been analysed before, showed to contain the highest amount of d-limone (40.75 µg/L) and allyl isothiocyanate (1090.26 µg/L), the most important volatile compounds responsible for the fresh cabbage flavour. The presented results mark off “Čepinski” cultivar as valuable for larger production and further examination.

In wheat, Fusarium fungus promotes the appearance of destructive disease named as Fusarium head blight (FHB) that can cause grain yield reduction and mycotoxin accumulation. The focus of this research was to verify the influence of Fusarium graminearum and F. culmorum on wheat genotypes with different susceptibility to FHB: “Super Žitarka” (susceptible), “Lucija” (moderately resistant) and “Apache” (resistant). The experiment was performed under field conditions by artificial spore inoculation of ears at the flowering stage. The effectiveness of antioxidative enzymes, hydrogen peroxide (H2O2) content and malondialdehyde (MDA) content were observed at several sampling points after Fusarium inoculation (3, 15 and 24 hours). “Lucija” responded to pathogen by increase of guaiacol peroxidase (POD) activity, high H2O2 and MDA content in the early post-inoculation times (3 and 15 hours), compared to control. “Super Žitarka” displayed inhibition of catalase (CAT) activity throughout the whole time course of the e...
