Fernando A. Osorio, Full Professor, Dept. of Food Science and Technology, University of Santiago-Chile. Ph.D. in Food Engineering and Food Science from Michigan State University (USA), M.Sc. in Food Science from Michigan State University (USA), and Chemical Civil Engineering from the University of Chile Specializing in the physical properties of foods; food processing; rheology and food texture; non-Newtonian fluid flow; heat transfer to non-Newtonian fluids; and fluid mechanics. Currently, he is developing research on liposomes that encapsulate grape seed tannins and their physical/chemical, mechanical, and technological properties, with applications in food coatings to add nutritional value and antioxidants to dairy products.
