This article aims to empirically investigate the role of claims of credence attributes in the launch of food and drink products using a large dataset of new product development by food companies in China. A multinomial regression model is employed to analyze the association between the type of product launch and the positioning claims adopted by firms. The results provide evidence that claims of credence attributes play an important role in the product launch strategy of firms. Food companies tend to choose the most cost-effective strategies to launch products with credence attributes. Hence, claims that are seen as most important for consumers are more likely to be engendered for the more costly launch approach. For example, the attribute of food safety is highly important in China and its use is related to launching brand new products which generally is the most costly launch strategy. In contrast, other credence attributes, such as “environmentally sustainable,” are linked to relatively simpler and cheaper strategies, such as new packaging. Given most studies on credence attributes have focused on the consumer side, results of this study fill in the gap of understanding how food suppliers respond to consumer demand for food products with credence attributes.

The purpose of this paper is to provide an analysis of the purchases of meat and fish in Great Britain during the lockdown period using time series constructed from a unique scanner panel dataset available since 2013 and which is based on information about 30 thousand households. The time series available for the analysis represent the purchases (expenditure and quantities) of all consumers and by income groups were used to compute price and quantity indices all the meats together and for each meat (i.e., beef, lamb, pork, poultry, and other meats) and fish. The changes in expenditure were decomposed into changes in prices, quantities purchased and changes in quality purchased (trading up/down in quality) i.e., whether cheaper meat or fish were purchased. A further extension of the analysis was produced by considering the evolution of calories, saturated fats and sodium per purchased quantity for meat and fish during the period of study. The results indicate that although the shares of quantities remained relatively constant, the calories, saturated fats and sodium from the purchased quantities showed an increasing trend, indicating that most of the incomes groups were lowering the nutritional quality of their meat and fish purchases. This is clearly shown by the fact “other meats” represents on average 39 percent of the calories contributed by meat and fish, 49 per cent of the saturated fats and about 68 of the total sodium in meat and fish during the lockdown period. This result highlights the need to emphasize healthy messages related to the purchases of meat.

This study examines the integration of regional dairy markets in Poland, which is a major European dairy producing country. The analysis of prices is important, as many dairy farmers are members of dairy processing cooperatives, and their incomes are affected by the prices of two popular products: butter and curd. Moreover, the period of study included significant fluctuations in the world market and the termination of the milk quota system in the European Union (EU). The price records used in this study are from the two main milk-producing regions in the country: Northern and Central. The data were tested for stationarity and Granger causality before estimating a Vector Error Correction (VEC) model. Estimation results show that the removal of the milk quota lowered prices of butter and curd in the two regions. The relationships of the prices in both regions for butter markets were nearly perfect during the period January 2010–November 2017, but curd prices were found unintegrated. Impulse response analysis showed that the effect of shocks was mostly absorbed in a two-week period and prices returned to full equilibrium in about four to five weeks. This fast price adjustment indicates that both markets operate properly and no market participant can obtain gains above those offered at equilibrium.

Despite the interest in increasing the consumption of fruit and vegetables in the UK, the total average consumption is still below the recommended intakes. Evidence indicates that the UK government’s “five-a-day” policy has not been effective in reaching its goal. The results of fiscal policies (e.g., subsidies) to increase fruit and vegetable consumption are uncertain due to complex substitutions done by consumers amongst overall food choice. The goal of the present study was to estimate the prices (i.e., shadow prices) at which consumers can increase their intake of fruits and vegetables by 10% (higher than that achieved by the “five-a-day” policy) without changing the overall taste of the diet (utility). We estimated the ex-ante effect of increasing the UK’s fruit and vegetable consumption by 10% on household nutrient purchases and greenhouse gas emissions. The required changes in prices were estimated by extending the model of consumer behaviour under rationing. The model combines consumption data, demand elasticities estimated from home scan data, and nutrient coefficients for 20 foods consumed in the UK. Our results suggest that to increase vegetable and fruit consumption by 10% (under the current preferences), their prices should decline by 21% and 13%, respectively. However, there is a trade-off between nutrition and environmental goals; total average household caloric purchase declined by 11 kcal, but greenhouse gas emissions increased by 0.7 CO2-eq kg/kg of food.

Nutritious ‘orphan’ crops could (re)diversify African food systems, but appropriate means to bring this about are required. A review of the literature on crop intervention options suggested success and failure factors in promotion, but indicated little about the relative importance of production-versus consumption-based measures and how these interact. An analysis of secondary crop production data indicated that addressing food policies could be valuable for orphan crop mainstreaming, but, as with literature review, did not provide clear guidance on the importance of different interventions. A survey of experts suggested that cross-disciplinary teams are important for developing mainstreaming strategies, but revealed no clear consensus on the importance of particular measures for specific orphan crops. We discuss the implications of these findings.

Dairy is a key investment sector for the Government of Malawi. On 1 October 2016, the Malawi Revenue Authority announced that milk, which until then had been exempted from value added tax (VAT), was going to be taxed at the standard rate of 16.5 percent. The measure has been met with strong opposition and thus, was short lived (eliminated in May 2017). The purpose of this paper is to present an analysis of the effect that such a tax would have on its incidence, on the different stages of the supply chain, and ultimately on its economic and social sustainability. The paper investigates these implications by developing a multimarket model applied to the Malawian dairy supply chain. The results indicate that 24.3 percent of the VAT revenues would be borne by consumers and the remaining 75.7 percent would be borne by the domestic dairy industry (i.e., processors and smallholder farmers). This was due mainly to the value of the price elasticity of consumers’ demand for pasteurised milk. The results highlight the vulnerability of inclusive value chains to economic policies that may affect consumers’ demand.

Food safety, whether actual or perceived, is one of the major reasons for food waste along the agri‐food supply chain. Food safety hazards at farm level such as mycotoxin contamination of feed, overuse of antimicrobials in livestock disease control, and zoonotic disease incursion may lead to food unfit for human consumption and thus waste. Given the importance of safety as one of the most important attributes of food, the appropriate management of risks along the supply chain can contribute to reductions in food loss and waste. However, a better coordination between food waste and safety policies is also needed, which requires: balancing the scientific evidence and the precautionary principle; reviewing current food safety regulations to identify areas potentially leading to avoidable waste; combining the monitoring of safety hazards and waste along the agri‐food chain; provision of tailored information on linkages between food safety and waste; and investment in technologies to accurately assess the edibility of food. Attention needs to be paid to policies and practices on food labelling and packaging to ensure that they do not lead to unintended or unnecessary impacts on food safety and waste, which are not justified by scientific evidence.

This study investigates the substitution and complementary effects for beef mince attributes drawing on data from large choice experiments conducted in the UK and Spain. In both countries, consumers were found to be willing to pay a price premium for the individual use of the labels “Low Fat” (UK: €3.41, Spain: €1.94), “Moderate Fat” (UK: €2.23, Spain: €1.57), “Local” (UK: €1.54, Spain: €1.61), “National” (UK: €1.33, Spain: €1.37), “Organic” (UK: €1.02, Spain: €1.09) and “Low Greenhouse Gas Emissions (GHG)” (UK: €2.05, Spain: €0.96). The results showed that consumers in both countries do not treat desirable food attributes as unrelated. In particular, consumers in Spain are willing to pay a price premium for the use of the labels “Local”, “Organic” and “Low GHG” on beef mince that is also labelled as having low or moderate fat content. By contrast, consumers in the UK were found to discount the coexistence of the labels “Low Fat” and “Organic”, “Low Fat” and “Low GHG” and “Moderate Fat” and “Low GHG”. The results, however, suggest that in the UK the demand for beef mince with moderate (low) fat content can be increased if it is also labelled as “Organic” or “Low GHG” (“Local”).

The analysis of changes in prices is not only important because they directly affect households’ affordability and, therefore, their food security but also because they may trigger changes in the composition of their food and drink choices. Thus, an increase in prices may force a household with limited resources to choose a bundle of goods with lower prices that substitute their original choices and are probably of lower quality. This paper considers the situation of each UK country and the implications that trading down in quality within a food and drink category has on nutrition. Two motivations to pursue these analyses are to explore the sort of substitutions that households do within a category due to an increase in prices and, in the UK leaving the European Union (Brexit) context, the impact that an increase in food prices may have on nutrition. After computing estimates for trading down for each country for the period 2007–2014, we regress the annual rate of change by nutrient with respect to the annual trading in quality for six food qualities that are major contributors of fat, sugar and salt to the diet. The results indicate that trading down in quality occurs in most of the studied categories and countries, and when households trade down, they move to products with worse nutritional quality. This points out the need to keep improving the quality of products through reformulation, ensure that consumers are well informed of nutritional quality of products and monitor the effect of changes in prices.

Regular breakfast consumption has the potential to prevent the prevalence of NCDs and to improve the nutritional profile of diets. Given consumers’ interest in improving their diets, food suppliers are interested in introducing new cereal products making different health claims to capture consumers’ attention. The purpose of this study is threefold: first, it aims to understand whether UK food suppliers are working to increase the availability of breakfast cereals with healthy and nutritious attributes; second, it explores which companies are leading the launch of these products; and third, it assesses to what extent health and nutrition claims made by breakfast cereals have an impact on their market success. The study employs an assembled database combining data from Mintel Global New Products Database (GNPD) and Kantar Worldpanel Dataset (KWDS) for the UK. A hazard-based duration model was used to analyse the success of the new products launched in the UK market in 2011 following them up to 2015. Our results reveal that UK suppliers broadened the number of breakfast cereals on offer in the period 2000 to 2018, with a particular focus on multigrain cereals, porridge and granola. Health and nutrition claims were added to 27% of these products. Although consumers welcome healthy alternatives such as muesli, the impact of positional claims on the success of newly developed breakfast cereals is claim-specific. No clear pattern regarding the impact of health and nutrition claims is identified. However, other elements such as celiac-friendly ingredients and UK origin do have a positive impact on the success of breakfast cereals.

Using monthly data for the period 2006–2011, this study analyzed the degree of spatial market integration in Malawi focusing on two dairy products (liquid milk and powdered milk) sold in the four major towns of the country. The analysis of spatial market integration is important to assess whether to re-establish a dairy processing facility in the northern part of the country. The empirical analysis comprised of the following steps: (1) Integration between prices from different regions were tested using Johansen’s cointegration procedure, with the results indicating that, in the long run, prices in some areas move in a similar direction. (2)Two spatial equilibrium models were estimated using a three-regime bivariate threshold vector autoregressive model (TVAR) and a three-regime threshold vector error correction model (TVECM). The results showed that transaction costs were not a cause for concern between the areas thus northern Malawi does not need to re-establish a dairy processing facility as surplus areas (mainly Southern Malawi) can supply the region.

The Chinese society has undergone an important transformation in the last 20 years, withchanges in lifestyles due to increasing urbanization and rising income levels. The emergence ofmodern supermarkets, convenience stores, and hypermarkets has run alongside the changes inconsumers’ lifestyles, revolutionizing the Chinese food system and the nature of its food supply.Changes in food consumption patterns have also accompanied these shifts. One of thedistinguishing aspects of this modern food sector is the continuous introduction of new foods andbeverages to the market, and the communication of their associated attributes through labels, instoredisplays, and advertising. The purpose of this paper is to explore whether there have been anytrends towards the introduction of products with greater health, nutrition, and food safety attributesto help consumers attain healthier diets making trade-offs between purchase options. Results showthat there has been a rise in the number of new products in the Chinese food retail sector,particularly branded products introduced mainly by Chinese companies making food safety claims.It is clear, however, that the new food and drink products follow the consumption trendshighlighted in the literature, and, therefore, there are low chances that they will positively influencethe Chinese diet to an important degree, as they are mainly reinforcing the observed dietary trends.

The future of organic agriculture will, to a large extent, depend on consumer demand. As a result, the last three decades have witnessed a considerable increase in the number of papers that have attempted to identify the determinants of organic food consumption and whether organic foods are competing with other ethical food products such as local foods, animal-friendly foods, healthier foods and free-from foods (e.g., dairy free, gluten free, nut free). This study went a step further and assessed the use of animal welfare and nutritional information to increase the demand for and the competitive power of organic foods using a non-hypothetical experimental auction. Overall, the results showed that the demand for organic animal products could be improved not only by selling better its superiority in terms of sustainability but also by promoting its advantages in terms of other attributes that are known to be highly valued by consumers such as animal welfare and nutritional content. Therefore, producers and marketers of organic animal products should be fully aware of the potential of their products and ready to exploit all their advantages if they want to improve their competitive power as well as their demand.

Poland depends on imports for its transportation fuel supply and EC renewable energy policy encourages rapeseed conversion into biodiesel. This paper discusses changes in winter rapeseed production following changes in sugar policy, decreased dependence on potato use as feed and food, and the EU 2007–2009 support program for production of oil seeds as biofuel feedstock. We examine whether farm cost efficiency scores differ across Poland's 16 regions between those growing rapeseed and all other farms using Farm Accounting Data Network (FADN) data. Farms growing rapeseed are more cost efficient in all regions, and while regions with long experience in growing rapeseed still dominate the production, rapeseed production is expanding into new areas. Subsidies offered under the EU support program likely initiated expansion and the expansion continues after the program expired. Less efficient farms can be encouraged to enter rapeseed production through farm outreach services and competitive prices in relation to other crops since the available land permits further expansion of this biodiesel feedstock production.

In the context of national and cross-national efforts to reduce the quantity of food wasted by consumers, there is growing interest in the role of date labelling. Recent proposals by policy makers and the food industry to address dairy product waste have included streamlining date-label application and encouraging the use of best-before dates where possible. In order for these measures to have a positive impact on food waste, consumers must not only know the difference between date types, but also be prepared to act on this information and consume products after the best-before date. Through a survey of 548 Scottish consumers we investigated the relationship between product type, date type, reduced labels and willingness to consume (WTC) dairy products in relation to the both the best-before date and the use-by date. We also examined the factors associated with different levels of WTC products in relation to the best-before date including knowledge, risk perceptions and trust. Our results suggest that on their own, the effect on food waste of applying best-before dates to dairy is likely to be small. In order for such changes to be effective, consumer communication that goes beyond improving expiry-date knowledge and addresses the multifaceted nature of related risk perceptions and conceptions of date-label trust will be required.

Purpose The purpose of this paper is to analyse the overall effect of promotions on consumers’ food purchases in Scotland and to consider the implications of the findings for food and health policy. Design/methodology/approach This is achieved by analysing a representative scanner panel data set for the period 2006-2013. The methodology consists of exploring the impact of promotions on food expenditure and allocation within households’ food purchases, using expenditure regressions and estimations of the linear version the Almost Ideal Demand System. Findings The results indicate that whilst promotions have differentiated effects by category, they have similar results by SIMD. The effect of the promotions on the total expenditure is positive for all the quintiles. However, the effect of promotions on each food category is complex because of the cross-effects between categories. As regards the effect of prices, the results provide a picture that seems to indicate that typical economic measures such as specific taxes applied to substances which, e.g., encourage obesity, might have limited impact on the diet given the inelasticity of the demand to changes in prices. Originality/value A contribution of this paper has been to focus on the effect of promotions on all the food products consumed by Scottish households, instead of analysing promotional influences on a single or reduced number of products within a category.

WTI and Brent crude oil futures are competing pricing benchmarks and they jockey for the number one position as the leading futures market. The price spread between WTI and Brent is also an important benchmark itself as the spread affects international trade in oil, refiner margins, and the price of refined products globally. In addition, the shapes of the WTI and Brent futures curves reflect supply and demand fundamentals in the U.S. versus the world market, respectively. On the analysis of the relationship between the two futures prices, we identify a structural break in the WTI–Brent price spread in January 2011 and a break in the corresponding shapes of the futures curves around the same time. The structural break was a consequence of a dramatic rise in U.S. production due to fracking, a series of supply disruptions in Europe, binding storage constraints, and the U.S. crude oil export ban. These events are studied in the context of a simulation model of world oil prices. We reproduce the stylized facts of the oil market and conclude that the 2011 break in pricing structure was consistent with standard commodity storage theory.

Greenhouse gas (GHG) emissions associated with food consumption have become particularly pertinent issues given recent warnings that the planet recently has experienced its hottest year. One way proposed to reduce those emissions is through a carbon consumption taxes. This study uses consumption, nutrient and GHG emission data to estimate the impact of two ad-valorem taxes: one applied by food category and another by the carbon emission of the products. The results suggest that the carbon consumption tax scenarios would reduce GHG emissions by a greater quantity relative to the ad-valorem tax scenario; however, the intake of important nutrients will also decrease in these scenarios. Therefore, creating an environmentally sustainable and nutritious diet through taxation is challenging and requires compromise between the nutrition and environmental sustainability.

Milk quotas were introduced in 1984 to the EU dairy market to control the structural surpluses resulting from imbalances between supply and demand for milk encouraged by subsidies to the sector. These quotas were abolished on the 31st of March 2015, leaving the sector to operate closer to free market conditions. Milk in the United Kingdom is marketed through contracts and the purpose of this paper is to analyze, using time series methods, to what extent market factors are driving the observed evolution of U.K. contract prices. The five groups of contracts considered are: retailers’ aligned contracts, standard liquid contracts, A&B contracts, cheese manufacturing contracts, and other manufacturing contracts. Results indicate that, although market factors play a role in influencing all contract prices, their effect is different by type of contract, and quota abolition does not have a significant effect on the time series behavior of contract prices.
