Dr. José Antonio Vázquez has been the leader of the Group of Recycling and Valorisation of Waste Materials (REVAL) since 2013 and was Head of the Department of Food Technology of the IIM-CSIC from July 2020 to December 2023. He received his Master’s degree in Biochemistry from the University of Salamanca in 1996 and a Ph.D. degree in Chemical Engineering from the University of Santiago de Compostela in 2001. He has been working on the mathematical modeling of bioprocesses and in the development, optimization, and scale-up of sustainable processes for the valorization of discards, effluents, and by-products from fish processing as well as agrifood wastes, under the concept of Marine Biorefinery, to produce probiotics, gelatins, glycosaminoglycans, bioactives, biopolymers, enzymes, prebiotics, etc.
