Over the last years, social and environmental issues have played an increasingly important role both for tourists’ destination choice and for the consumption of agri-food products. However, in the literature on culinary tourists’ behavior, it is not clear whether sustainability issues also affect the configuration of specific culinary tourists’ targets. This study tries to bridge this gap by carrying out a segmentation of culinary tourists in Italy, a country known worldwide for its culinary specialties. In particular, this study aims to understand whether the growing tourists’ sensitivity toward environmental and social aspects shapes specific targets of culinary tourists. The results show that in culinary tourism, sustainability plays a key role in culinary destination choice. These findings may have a twofold purpose. On the one hand, the results enrich the literature on culinary tourism by revealing that motivations linked to food sustainability could shape a specific target of culinary tourists. On the other hand, the findings provide insight and hints to entrepreneurs and managers of the hospitality and tourism sector interested in improving their performance to fully satisfy culinary tourist expectations in terms of environmental and social concerns.

In Western society, the fresh-cut fruit market is experiencing significant growth, especially in Italy, where, in 2019, the fresh-cut fruit sales volume increased by 35% compared with the previous year. This study aims to understand Italian consumers’ demand for fresh-cut fruits and to explore whether this trend is also affected by the prevalence of healthy lifestyles. Health orientation seems, in fact, to be a growing trend in the food sector. Research has recognized that consumers’ orientation towards products that are ready to be consumed is not only related to saving time. Sociodemographic factors and psychometric variables, including values and lifestyles, play important roles in understanding consumer demand for convenience products. For this purpose, the food-related lifestyles (FRLs) tool was used to profile consumers. The FRLs tool is a useful instrument that describes different ways in which people use food to achieve their values in life. Data were collected by using an online survey carried out with Italian consumers of fresh-cut fruits. By using a cluster analysis technique, four Italian fresh-cut fruit consumer target groups were identified. The largest target group was represented by uninvolved consumers, who are not inclined to cook or plan meals and who are very influenced by the advertising of food products in their buying decisions. An interesting target group, which may represent a challenge for food enterprises in the sector, was health-oriented consumers, who attach great importance to organic certification and to product information. This target group was also characterized by older consumers with higher net monthly household incomes than other target groups.

Local products and their distribution through short supply chains play a key role in the sustainable development of many rural areas, as affirmed by the 2030 Food and Agriculture Organization of the United Nations (FAO) Agenda. Moreover, in the last years, more and more consumers have shown a specific interest towards local production, pushed by the need for healthy eating, protecting the environment, and boosting the local economy. However, the cultivation of local fruit varieties or ecotypes has considerably decreased in the last decades because of their low production potential. As a result, many farmers have been forced to replace local orchards with few worldwide grown cultivars, causing a loss of genetic agrobiodiversity. For instance, in Italy, the loquat market is composed of imported cultivars and local grown autochthonous fruits (ecotype). Therefore, the aim of this study is to analyze the chemical–physical and sensory qualities, as well as the determinants of Italian consumer preference towards local ecotype of loquat fruit compared to imported varieties. Results show that local ecotypes result in excellent physico-chemical and sensory attributes, and that place of purchase and taste are the most important factors influencing consumers’ preference towards local loquats. Therefore, the cultivation of loquat ecotypes, together with effective marketing strategies, could increase the competitiveness of certain Italian rural areas, where this crop has always played a significant role in the economy.

Culinary tourism represents an emerging component of the tourism industry and encompasses all the traditional values associated with the new trends in tourism: respect for culture and tradition, authenticity and sustainability. Italy is known worldwide for the richness and variety of its gastronomy, and agri-tourism represents one of the most important places where culinary tourists can experience local food and beverages. By using a modified version of Kim and Eves’ motivational scale, the present study aims to investigate which motivational factors affect the frequency of culinary tourists to experience local food and beverages in agri-tourism destinations. The findings of the present study reveal that the social and environmental sustainability, among the other motivations, has shown to play a crucial role in influencing Italian tourists’ frequency to experience local food and beverage in agri-tourism destinations.

Nowadays, more and more consumers show a growing interest in healthy food products that may help to maintain or improve human health, such as honey. Honey has always represented a fundamental component of traditional medicine in many world cultures. However, only thanks to several studies carried out in the last years, its use is considered as an alternative and complementary medicine, namely apitherapy. In this way, honey is recognized increasingly by consumers not only as a natural alternative to refined sugar but as healthy food, as shown by determining an increase of its consumption worldwide. This study aims to explore the consumers’ determinants of honey consumption, trying to understand whether, and how much, therapeutic properties of honey affect the Italian consumers’ choices. The findings of this study, although exploratory, provide information on which quality characteristics influence honey consumption in Italy, revealing that, among quality attributes, the therapeutic properties of honey play an important role in affecting consumers’ behavior, followed by income, variety and taste. This could have some implications for producers and marketers as this information could contribute to defining effective marketing strategies for communicating to consumers the quality attributes of honey and its therapeutic benefits.

Over the last decades, in many rural areas in Southern Europe, farmers have abandoned agricultural activity, especially on small-sized farms, leading to an exodus from rural areas towards urbanized ones. In this context, in the early 1980s, some Sicilian farmers introduced mango on their small-sized farms, as certain areas of Sicily are well suited to tropical and subtropical crops, but also to meet increasing consumer interest for these fruits, as they are perceived as functional foods. This paper aimed to evaluate the economic sustainability of mango and to determine whether its introduction could be considered as an alternative to traditional crops. In particular, an economic-financial analysis of mango orchards on small-sized Sicilian farms was performed by adopting a discounted cash flow approach. In order to provide as comprehensive information as possible, mango was compared with two traditional crops that have always played an important socio-economic role in Southern Italy: wine grape and orange. Results showed a clear economic convenience for mango orchards, denoting an annual gross margin of 14,617.03 €/ha, on average 20 times higher than orange orchards and just less than 40 times higher in respect to vineyards. The higher profitability of mango was also confirmed without considering public grants for the planting phase, and by varying current sales prices and costs. However, it should be considered that the cultivation of mango could represent an opportunity for sustainable development only for certain Sicilian areas, as it is closely related to favorable pedo-climatic conditions.

The relationship between humans and the forest has always been an important element, sometimes characterizing in the history of man himself. During the last years, the socio-economic context is profoundly changed, diversifying economic services provided by the forest. In the past, in fact, the primary function of the forest was the firewood production, while nowadays it grants several socio-economic benefits such as climate change mitigation, soil protection, protection and conservation of biodiversity, landscaping and recreational value. So, in recent decades a new type of socio-economic interest was developed in order to create a market of goods and services for the forests, called as payments for ecosystem services (PES). This paper, through a survey conducted in a wooded area of Sicily where recently was established a typical example of PES (Ecocampus), aimed at determining the actual satisfaction by users of the various services provided by forest, the reasons that lead them to visit it and their willingness to pay.

Sicily has a long tradition in citrus fruit cultivation that, with vineyard and olive tree, represents the main Mediterranean tree crops. Since many Sicilian farmers in recent years have decided to abandon conventional lemon orchards, in this paper we have evaluated the financial sustainability of organic lemon production by comparing it with the conventional one.\ud Financial analysis has been carried out in a case study on the northwestern coast of Sicily, considering a 50-year economic life of an orchard. The results, per hectare of area, showed a clear advantage of organic lemon orchard. This was due to fewer labor requirements and to greater market appreciation for organic products that better ensured a premium price. Moreover, financial indicators of organic lemon orchards and the deployment of environmental-friendly inputs in the production process render these farms competitive and eco-friendly

The conversion from conventional to organic management of olive growing has many benefits, such as increase of biodiversity, reduction of soil erosion and lower environmental impact. Since olive represents a main crop in the Mediterranean area, from a social, economic as well as environmental point of view, the aim of this paper has been to determine if the conversion from conventional to organic olive growing can increase the profitability of the farmer in Sicilian farms. Economic analysis has been carried out by means of cost-benefit analysis and financial indicators (NPV, B0/C0, IRR) show that organic growing would allow a better profitability for organic olive farms respect to conventional ones. This is primarily due to CAP subsidy and to market price of organic olive oil, which is currently 21% higher than the conventional olive oil price

The increase in energy prices and the stagnation of sales prices of the main agricultural commodities required a rethinking of farm production strategies. Since during the last years, thanks to a series of policies aimed at promoting renewable sources it has been a rapid diffusion of lignocellulosic biomass species, this paper aimed at evaluating the economic feasibility of the introduction of eucalyptus (Eucalyptus spp.) as energy crop for farmers of Southern Italy, by comparing it with traditional crop rotations. In particular, economic analysis has been carried out in a representative case study located in the Sicilian hilly hinterland where, in 2013, it has been built a biomass plant for energy production. However, results showed that introduction of eucalyptus for biomass production is less profitable for farmers than traditional crops, considering the incompressibility of production costs and the actual market price of woodchips

Sicily has a long tradition in citrus fruit cultivations that with vineyard and olive tree represent the main Mediterranean tree crops. In this paper we have evaluated the economic and financial sustainability of lemon production, both in organic farming and in conventional farming; the two systems differing just for inputs utilized in production process. Economic analysis has been carried out in a representative case study located in the Sicilian northwestern coast, considering an orchard economic life equal to 50 years. Results, which referred to one hectare area, showed both a higher economic and financial sustainability of organic farming respect to conventional farming. The higher profitability of organic farming was due to minor labor requirement and to greater market appreciation for organic products that granted a premium price respect to conventional prices. Moreover, greater profitability of organic farming and use of environmentally friendly inputs in production process make farms competitive and eco-friendly.

Greenhouse tomato cultivation plays an important role in Sicily, being the primary production area in Italy, due to its favorable pedo-climatic conditions that permit extra-seasonal productions. In Sicily, more than half of greenhouse tomato production is derived from the Province of Ragusa on the southeastern coast, where especially cherry tomato typologies are cultivated. Over the last decade, the Ragusa Province has registered a decrease both in terms of greenhouse tomato area and harvested production due to several structural problems that would require restructuring of the tomato supply chain. Thus, since recognition of real costs and profitability of tomato growing is a vital issue, both from the perspective of the farm, as well as from that of the entrepreneur, the aim of this paper was to analyze the economic sustainability of Sicilian greenhouse cherry tomato cultivated in the Ragusa Province. In particular, an economic analysis on 30 representative farms was conducted in order to estimate production costs and profits of greenhouse cherry tomato. According to our results, the lack of commercial organization, which characterizes the small farms we surveyed, determines low contractual power for farmers and, consequently, low profitability.

Thanks to national energy policies, over recent years the Italian photovoltaic (PV) sector has undergone an extraordinary growth, also affecting the primary sector. In this context, Mediterranean greenhouses are well-adapted to photovoltaic systems because they represent one of the most energy-intensive sectors in agriculture. The Italian feed-in scheme ended at the beginning of 2013, making it necessary to investigate the feasibility of photovoltaic systems devoid of any electricity production-related incentives. In this paper, production cost and profitability analyses of photovoltaic electricity have been conducted, considering Mediterranean solar greenhouses in which, thanks to net metering, all the electricity produced by photovoltaic panels is self-consumed. Our results showed that grid parity is already reached for Sicilian PV systems with a capacity greater than 50 kW. Moreover, net present value, internal rate of return and discounted payback time all demonstrate the high economic convenience of all the photovoltaic investments analyzed, due to the huge savings on energy expenditures.

In addition to safeguarding the landscape, olive growing makes a unique contribution to protecting the environment and the agricultural ecosystem. Olive growing in mountainous and hilly areas is severely constrained by structural limitations. Rural tourism can be a potential strategy to increase the competitiveness of olive-growing activities. After an initial analysis of the relationship between landscape, tourism, and olive growing, this study focused on olive growing in the Nebrodi area. In particular, we examined two case studies of olive farms to analyze the related production costs and market positioning strategies.

The production of energy from renewable sources is a form of energy production that has less impact on the environment than the traditional one. For the farmer this new form of production represents an opportunity, especially for the economic benefits that can produce, both in terms of the incentives provided by the public operator and for higher revenues, deriving from the sale of energy back to the grid and/or the savings generated by self-consumed energy, that help to increase the farmer’s income. In this paper, we analyzed a case study of a farm that has realized a grid-connected photovoltaic (PV) system on a greenhouse. In particular, firstly the farm profitability has been estimated and subsequently, in order to assess the efficiency of the energy policy adopted by the Second Conto Energia in Italy, the minimum incentive tariff at which the entrepreneur has an economic advantage to realize a PV system has been determined. Results show that PV system relegates to a marginal role the cultivation of agricultural products compared to energy production and that government PV remuneration policies far outweigh the minimum threshold that makes the investment advantageous.
