Antonino Galati is Associate Professor of “Agricultural economics and valuation” at the Department of Agricultural, Food and Forest Sciences, University of Palermo (Italy, EU). He holds a Ph.D. in Agricultural Economic and Policy (2007) from the University of Palermo and a Postgraduate Specialization Diploma in “Politique et choix publique en agriculture et alimentation (2005) from Institut Agronomique Méditerranéen de Montpellier, and is also the Italian country director of the EuroMed Academy of Business (EMRBI), fellow of the EMRBI and a Co-Chair of its Research Interest Committee in Agribusiness. He is the scientific officier of the EnerNETMob project co-funded by the European Interreg Med program. His research interests include market competitiveness, agribusiness, marketing strategies, management, logistics and market analysis. His research has been published in a wide range of international peer-reviewed journals.

The transition towards more sustainable approaches in the Food Supply Chain was concretely visible in the implementation of alternative models, like the Short Food Supply Chain. Some authors raise doubts on the environmental impact of this model, in particular for the externalities caused by the transport system, suggesting the adoption of Electric Freight vehicles. By adopting a multi-stakeholder approach, the objective of this study is to explore both the barriers and potentialities involved in the adoption of Electric Freight vehicles in the Short Food Supply Chain, and the existence of a shared strategy at the system level able to foster their adoption. Results suggest that, for entrepreneurs, Electric Freight vehicles appear as a viable option, although more efforts are still needed at a governmental level, through the promotion of public measures in the form of support for purchasing costs or rental rate and offering technical expertise services. In terms of infrastructures, as is clear from interviews, improving the charging infrastructure efficiency to ensure EFVs shift optimisation and increasing the number of charging points are today a priority. On the whole, more collaborative methods should be inaugurated, contributing to a shared vision of urban mobility which takes into account all supply chain actors (charging point operators, automotive industry, rental car services, farmers, and local authorities) to ensure the system works in a more efficient way.

The pandemic COVID 19 has upset the economic, social, financial, and general behavioral systems. Global crisis has a large impact overall and related fallouts significantly affect existent structural paradigms in every country and region across the world. In particular, the spread of COVID-19 pandemic has led to having to rethink the way we produce and consume food. Within this global change, a rise in the number of consumers who purchase food products online in order to comply with the rules aimed at limiting the circulation of the virus should be emphasized. Consequently, probably causing a long-term positive effect on m-commerce. The purpose is to elaborate on the index of the satisfaction level of consumers of purchasing food online via food shopping channels, by using key factors that characterize the online spending behavior. The analysis was carried out by collection of data deriving from an anonymous online questionnaire administrated via social networks and emails, during the ‘hot’ months of the pandemic progression in Italy, which is March-May 2020. We analyze both dimensions of customer satisfaction (process and outcome), by means of two systems of indicators. We reduce their complexity using synthesis obtained with the Partially ordered set. Results highlight the differences between the two dimensions of customer satisfaction. Online shopping can surely contribute to reduction of food waste thanks to elimination of frenzied shopping routines at supermarkets and can open space to new fields of study. On the other hand, defining an index of the consumer’s satisfaction can alter sales strategies of m-commerce managers and entrepreneurs.

The advent of the Internet has significantly changed consumption patterns and habits. Online grocery shopping is a way of purchasing food products using a web-based shopping service. The current COVID-19 pandemic is determining a rethinking of purchase choice elements and of consumers’ behavior. This work aims to investigate which characteristics can affect the decision of online food shopping during the pandemic emergency in Italy. In particular, the work aims to analyze the effects of a set of explanatory variables on the level of satisfaction for the food online shopping experience. For achieving this aim, the proportional odds version of the cumulative logit model is carried out. Data derive from an anonymous on-line questionnaire administrated during the first months of the pandemic and filled by 248 respondents. The results of this work highlight that people having familiarity with buying food online, that have a higher educational level and consider food online channels easy to use, appear more satisfied for the food online shopping experience. These findings can be crucial for the future green global challenges as online shopping may help to reach competitive advantages for company sustainability.

Researchers, environmentalists, as well as fisheries and retailers, have been focusing their attention on the design, use and effects that fish ecolabels have on sustainability. The fish processing industry and large retailers have rapidly adopted several market-based standards, with consequences for two major stakeholders: fishermen and consumers. Although the standards have shown rather positive results, from the perspectives of marine biodiversity conservation, the fish industry and trade, it is not clear how they are able to support a change in people’s awareness about sustainability. For this reason, the present work reviews and analyses the literature, produced in the last ten years, regarding two international, private and voluntary ecolabels in the fish industry: FOS and MSC. The results confirm the relevant role these ecolabels are playing in promoting awareness about sustainable fish, describing the terms of this ongoing change and also proposing new insights from the literature to further reinforce this process. In particular, a multi-stakeholder approach is suggested for the production side so as to better exploit the sustainable potential of the system inaugurated by the ecolabel, while, for the consumption side to further spread knowledge about marine stock status and ecolabels’ meaning and scope, which would accelerate the ongoing process.

In important areas of the agricultural sector, plastic is one of the most important tools for improving the managerial and economic performance of companies. Horticultural production under protected cultivation, in particular, makes abundant use of plastic polymers—polymers that mostly turn into waste. This study aims to identify similar organisational models among farmers operating in the strawberry production sector in relation to their intention to recycle plastic material and which factors characterize these models (attitudes, subjective norms, perceived behavioural control, and socio-demographic characteristics) and to quantify the plastic used in relation to the different types of materials used. In order to achieve this aim, data coming from one of Italy's most specialized areas in the strawberry sector, Marsala, were analysed using a principal component analysis to identify latent factor and subsequently clustered in order to identify similar organisational models. The main findings show that behind a typical 250-gram basket of strawberries, the production process has generated more than 20 g of plastic waste, consisting of different polymers. In addition, younger farmers, who manage companies of smaller physical dimensions, and with a higher level of education, show a greater intention to join plastic recycling programs, guided by their attitudes, by the necessity to respond to social pressures, and by the ability to manage recycling programs. Our main result adds to previous knowledge that the informed producer (via greater awareness) is the key to solving the problem through improving environmental sustainability and creating a circular economy.

The food delivery sector is assuming increasing importance in the distribution of food products and meals as it is becoming an ordinary component of consumption habits. However, the growth of the sector has inevitably affected the demand for freight transport, especially in urban areas. The aim of this study was to investigate the main enabling factors affecting the adoption of sustainable strategies, among which the electro-mobility, in the food delivery sector and what obstacles to dissemination can be seen. Deliveroo s.r.l. was chosen as case study. Results show that Deliveroo undoubtedly represents a good example of sustainable logistics and the dissemination of good practices among the key players of the food delivery sector. However, if on the one hand there is a strong commitment on the part of Deliveroo to find solutions that encourage the use of these means, on the other hand, there is the need for a greater commitment on the part of the institutions to create infrastructure conditions that facilitate the diffusion of these means.

In recent years, the cultivation of algae has achieved attention of scientists and practicioniers due to the great variety of products that can be obtained, among which biofuels. The aim of this work is twofold. The first is to perform a profitability analysis of food and biofuel production from microalgae, in a small-scale setting. The second is to assess the economic impact of algae production systems on the dairy farms potentially interested in Southern Italy. The analysis was performed using financial and economic indicators and considering two system management scenarios, namely single and collective. Our results confirm that current microalgae production technology favors biofuel only as a co-product and that the production of high-value co-products improve profitability and net income in Southern Italian dairy farms, either in single or collective management. More specifically, the single management is more profitable, but the collective is more viable. The sensitivity analysis, based on the price uncertainty of algal biomass, confirms that the price of product is a critical parameter to ensure the investment feasibility in the agricultural context analyzed. Current study provides hints to entrepreneurs and managers operating in the agricultural sectors, interested in improving their firm’s performance through the adoption of a diversification strategy of business activities.

The purpose of this study is to examine inhabitants’ motivation and their willingness to pay to mitigate the impact of climate change on fish resources. Willingness to pay was tested empirically using survey data from 333 inhabitants of Sciacca, a fishing community in Sicily, Italy, which has the island’s second largest fishing fleet. People’s attitudes towards climate change, their degree of involvement in the issue, and their concerns about this phenomenon’s potential impact on the marine environment are the key factors affecting their willingness to pay. It was further found that respondents are willing to pay an average of €6.81 per month to support mitigation policies in the fishing industry. The originality of this study is related to its contribution in expanding the body of knowledge on citizens’ willingness to pay for the protection of fish resources, using a conceptual framework based on the Construal Level Theory and the Theory of Reasoned Action to explain inhabitants’ behaviour. The latter is one of the implications of this study on the theoretical point of view. In addition, this study provides insights and hints to policy makers to define tools, shared by the community, that contribute to the mitigation of climate change.

Culinary tourism represents an emerging component of the tourism industry and encompasses all the traditional values associated with the new trends in tourism: respect for culture and tradition, authenticity and sustainability. Italy is known worldwide for the richness and variety of its gastronomy, and agri-tourism represents one of the most important places where culinary tourists can experience local food and beverages. By using a modified version of Kim and Eves’ motivational scale, the present study aims to investigate which motivational factors affect the frequency of culinary tourists to experience local food and beverages in agri-tourism destinations. The findings of the present study reveal that the social and environmental sustainability, among the other motivations, has shown to play a crucial role in influencing Italian tourists’ frequency to experience local food and beverage in agri-tourism destinations.

Purpose The purpose of this paper is twofold: first, to identify distinct organisational models in a sample of firms operating in the wine industry; and second, to identify the main internal resources that characterise those firms most motivated towards the adoption of social media (SM) tools and those that perceive SM investment as more effective. Design/methodology/approach The empirical investigation was carried out by administering an online questionnaire to a sample of 82 Sicilian wineries. The principal component analysis was used to identify latent factors that drive managers to invest in SM technologies and to measure the impact perceived by managers. Subsequently, a cluster analysis was performed to identify similar organisational models. Findings The findings show that large wineries with a high number of employees possessing knowledge and skills in regard to SM tools and social network (SN) management are highly motivated towards the adoption of SM and perceive their SM investment as more effective. Research limitations/implications The main limitation of the paper lies in the limited sample size, which does not allow the results to be generalised. Practical implications The findings provide support for managers, who could use these results to better focus their investment on infrastructure that facilitates the development of specific skills needed to manage SM tools and SNs, as well as customer relations. Originality/value To date, very few empirical studies have focussed on providing evidence on the role and impact of SM integration into the marketing communication plan of a strategic industry, such as the wine industry.

R&D teams' internationalization attracts interests from different research-streams. However, the decision on what type of R&D structure is more convenient to invest in may differ, based on several factors, such as risk-taking propensity and internal resource availability. With an aim to enrich the extant literature and to provide practical insights for managers working in the wine industry, this case study explores the determinants of an Italian family-owned winery that attempts to keep a balance between its internal and external R&D teams' decision, using an integrated theoretical framework based on the transaction costs and the resource-based view theory. The optimal R&D solution based on an accurate costs vs benefits analysis leads the firm to hire highly qualified staff to manage its internal R&D unit, as well as to complement the unit with complementary resource that can be accessed through external R&D knowledge sources.

Purpose The purpose of this paper is to investigate consumers’ willingness to accept irradiated food and the major factors related both to socio-demographic characteristics and to the perceived risk of consumers about the assumption of foods treated with novel technologies and irradiation, in particular, affecting their behavior. Consumers’ need for information has been investigated. Design/methodology/approach An online survey, involving 392 consumers living in Italy, was carried out to respond to the aim of the study. A Probit model was performed in order to identify major factors affecting the probability to accept food treated with ionizing radiation. Findings Findings show that the acceptability of irradiated foods is mainly affected by the consumers’ perceived risk to health consequent to their consumption. Equally influent are the socio-economic characteristics such as age, monthly income and geographical area in which consumers live. Research limitations/implications This study provides some interesting suggestions both for policy makers and managers, primarily related to the need to start an effective promotion campaign aimed to familiarize the consumers about the principles, aims and benefits of irradiation technology. Originality/value Very few empirical studies have been carried out in order to evaluate the acceptability of foods products treated with ionizing radiation in Italy, where exist a growing problem related to the food loss and waste, and the need for information among consumers about the irradiated foods.

Recent food crises and uncertainty regarding food quality have pushed consumers towards a growing need to know more about the foods they purchase, including information related to both food quality and production. This paper identifies the main factors affecting consumer interest in receiving information on food irradiation technology. An online survey was used for research purposes and a total of 392 people, living in Italy, were questioned. Findings revealed that 89.2% of Italian consumers are interested in receiving information on the treatment of foods with ionizing radiation aimed at raising product safety. In particular, this interest was greater for respondents who reported a high sensitivity to food safety issues, who had already or who have unwittingly purchased irradiated foods, and those with a higher level of education. The results also underlined that a problem of misinformation exists among Italian consumers regarding irradiation technology, and that specific food education programs in the schools promoted by the ministry of education and promotional campaigns supported by public and private institutions, aimed at creating greater awareness and attitude among consumers about irradiated products, are necessary.

Stakeholder engagement in sustainability represents a powerful driver for value creation. Drawing from stakeholder theory, this paper explores how a firm with a proactive sustainable behaviour engages stakeholders in developing innovation and creating value. A longitudinal, single case study of the Salcheto winery was carried out. Since the late 1990s, Salcheto has been at the forefront of wine eco-innovation and it has played a key role in the development of Montepulciano (Tuscany, Italy) as one of the first sustainable wine clusters worldwide. The development of a sustainable wine culture is one of the firm's various innovations. In doing so, the firm has had to face three challenges - identity creation, legitimization and enhancement - and has engaged its stakeholders through three specific mechanisms (adoption and development; co-creation and diffusion; exploitation and contamination).
