The present study investigates the stability of an oleogel developed from extra virgin olive oil (EVOO) and candelilla wax (CDW) as a frying medium, including its 90‐day storage stability under dark and light conditions and its effects on in vitro digestion. The findings of the chemical analyses indicated that the gel structure and its storage in darkness effectively reduced oxidation, whereas exposure to light accelerated oxidative degradation. In addition, the oleogel, when utilized as a frying medium, exhibited superior stability compared to EVOO. Furthermore, the oil absorption rate of sliced potatoes fried in EVOO was 14.51%, which was lower ( p < 0.05) at 10.29% in potatoes fried in the oleogel. It was observed that during in vitro digestion, the gel structure reduced the interaction between lipase and oil, thereby slowing the formation rate of free fatty acids (FFA). As a result, the lipolysis rates in EVOO and the oleogel were 54% and 44%, respectively. Following in vitro digestion, α‐tocopherol bio accessibility was determined to be 98% and 94% in EVOO and the oleogel, respectively, while bioavailability rates were 16% and 34%, respectively. The bio accessibility of β‐carotene was found to be 53% and 41% for EVOO and the oleogel, respectively, while the bioavailability of β‐carotene was 6% and 3%, respectively. These results indicate that the oleogel structured with CDW offers significant advantages in terms of storage stability and effectiveness as a frying medium. At the same time, the gel structure demonstrated a notable influence on the digestion of the components in EVOO.
The aim of this study was to evaluate the effect of an ethylene absorber (zeolites) in a packaging material on the shelf life of button mushrooms (Agaricus bisporus). Mushrooms were packaged under passive modified atmosphere in low-density polyethylene (LDPE) bags with or without zeolites. Alongside the unpackaged control, three treatment groups were stored at 4°C and 50% RH for 16 days. Headspace gas composition, physical (weight loss, color and texture), chemical (pH, total soluble solids) and sensory analyses were carried out every 4 days of cold storage. Mushrooms packaged in LDPE bags without zeolites and LDPE with zeolites showed almost no significant change in weight during the storage time whereas the unpackaged mushrooms reached almost 20% weight loss by the end of the storage. Sensory attributes for mushrooms packaged in LDPE bags without zeolites and LDPE with zeolites were also still acceptable after the 8th day while unpackaged mushrooms lost their acceptability by day 4. Although no mentionable difference in shelf life was observed between samples packaged in LDPE bags without zeolites and LDPE with zeolites when physical, chemical and sensory properties considered, the active material was better than control material in terms of color, with less browning index and higher whiteness index.

Aquafaba, the viscous liquid obtained from cooking legumes, has gained popularity as a vegan egg substitute due to its foaming and moisture-retention properties. This study aimed to evaluate the potential of chickpea and lentil aquafaba, along with their respective flours, as egg and wheat-flour substitutes in gluten-free, vegan cakes. The foaming capacity of egg white, chickpea aquafaba, and lentil aquafaba was determined as 666.67%, 133.33%, and 116.67%, respectively, indicating superior foaming performance of chickpea aquafaba compared to lentil aquafaba. Physicochemical analyses revealed that cakes prepared with chickpea aquafaba had significantly higher moisture content (31.39–30.92%) and lower hardness than lentil-based formulations (p < 0.05). Lentil flour incorporation resulted in increased gumminess and lower overall sensory acceptability scores (2.71) compared to chickpea-based cakes and the control group (>3.50). Chickpea aquafaba and chickpea flour demonstrated sensory and textural attributes comparable to the control group, with no significant differences in texture perception (p > 0.05). The darker colours and unique texture associated with legume-based flours, particularly lentil flour, were linked to Maillard and caramelization reactions during baking. These results indicate that chickpea aquafaba and chickpea flour can successfully replicate the functional and sensory properties of traditional ingredients, providing a sustainable solution for gluten-free and vegan cake production.
