Fruit pomace remaining after juice extraction is still a source of bioactive compounds. Especially rich in these compounds is the pomace from blackcurrant fruit and from fruits of little-known horticultural plants, like: rowan, rosehip and elderberry. The addition of fruit pomace to bakery and confectionery products, especially to those made of white flour, may significantly enrich their composition with dietary fiber, vitamins and phenolic compounds. This study was aimed at determining the effect of 20 % addition of fruit pomace from rosehip, rowan, blackcurrant and elderberry on the properties of shortbread cookies. The pomace-containing cookies, compared to those without additives, were characterized by a darker color with a higher contribution of yellowness, and by higher hardness. The overall organoleptic assessment was comparable for all types of cookies, however the cookies with pomace were characterized by more perceptible taste and aroma, and were sourer. The extracts from pomace-supplemented cookies had a significantly stronger antioxidant capacity than that from the cookies without pomace, but they were ineffective in inhibiting lipid oxidation. The study showed that fruit pomace could improve the nutritional value of shortbread cookies. Furthermore, non-typical color of such a new product may be attractive to consumers.

The cherry silverberry (Elaeagnus multiflora Thunb.) is a lesser-known plant species with high nutritional and therapeutic potential. Cherry silverberry contains numerous biologically active compounds. The cherry silverberry is a shrub growing up to 3 m. Its drupe-like fruit is ellipsoidal, up to 1 cm long, and set on stems. It is red in color, juicy, and sour, and its taste resembles that of red currants. According to the literature, cherry silverberry fruit contains carbohydrates, organic acids, and amino acids, as well as vitamin C, in addition to biominerals, polyphenols, flavonoids, carotenoids, chlorophylls, and tocopherols, which contribute to its high nutritional value. New biotypes of cherry silverberry cultivated in Poland can be used for the production of functional foods and direct consumption. In China, the cherry silverberry, known as goumi, has been used as a medicinal plant and a natural remedy for cough, diarrhea, itch, foul sores, and, even, cancer. This review article summarizes the scant research findings on the nutritional and therapeutic benefits of cherry silverberry.

This study aimed to evaluate the potential of electrical parameters for assessing the quality and health-promoting properties of fruit purees derived from twelve superfruit species native to north-eastern Poland. Their physicochemical characteristics were determined using reference methods, while electrical measurements were conducted with a custom-built system based on an equivalent circuit model (RCC). The recorded electrical parameters included impedance, admittance, and series and parallel capacitance across a frequency range of 100 Hz–1 MHz. Pronounced differences in dry matter, extract, ash content, and bioactive compounds were observed between species. Cluster analysis and PCA revealed that purées with higher bioactive compound content exhibited strong and statistically significant correlations between electrical parameters reflecting impedance and admittance and variables such as dry matter, total extract, and ash (p < 0.01). In contrast, capacitance-based parameters showed weaker and more composition-specific relationships. In purées with lower levels of bioactive compounds, the number and strength of correlations were reduced. These findings indicate that frequency-resolved electrical parameters may serve as a complementary, non-destructive tool for assessing composition-related variability in fruit purées and may support rapid quality evaluation alongside conventional assays.
