The application of smart packaging technology in fruit and vegetable preservation has shown significant potential with the ongoing advancement of science and technology. Smart packaging leverages advanced sensors, smart materials, and Internet of Things (IoT) technologies to monitor and regulate the storage environment of fruits and vegetables in real time. This approach effectively extends shelf life, enhances food safety, and reduces food waste. The principle behind smart packaging involves real-time monitoring of environmental factors, such as temperature, humidity, and gas concentrations, with precise adjustments based on data analysis to ensure optimal storage conditions for fruits and vegetables. Smart packaging technologies encompass various functions, including antibacterial action, humidity regulation, and gas control. These functions enable the packaging to automatically adjust its internal environment according to the specific requirements of different fruits and vegetables, thereby slowing the growth of bacteria and mold, prolonging freshness, and retaining nutritional content. Despite its advantages, the widespread adoption of smart packaging technology faces several challenges, including high costs, limited material diversity and reliability, lack of standardization, and consumer acceptance. However, as technology matures, costs decrease, and degradable smart packaging materials are developed, smart packaging is expected to play a more prominent role in fruit and vegetable preservation. Future developments are likely to focus on material innovation, deeper integration of IoT and big data, and the promotion of environmentally sustainable packaging solutions, all of which will drive the fruit and vegetable preservation industry toward greater efficiency, intelligence, and sustainability.

This review provides an overview of recent advancements in hyperspectral imaging (HSI) technology for grain quality and safety detection, focusing on its impact on global food security and economic stability. Traditional methods for grain quality assessment are labor-intensive, time-consuming, and destructive, whereas HSI offers a non-destructive, efficient, and rapid alternative by integrating spatial and spectral data. Over the past five years, HSI has made significant strides in several key areas, including disease detection, quality assessment, physicochemical property analysis, pesticide residue identification, and geographic origin determination. Despite its potential, challenges such as high costs, complex data processing, and the lack of standardized models limit its widespread adoption. This review highlights these advancements, identifies current limitations, and discusses the future implications of HSI in enhancing food safety, traceability, and sustainability in the grain industry.

In this study, a novel strategy for accelerating the production of pumpable ice slurry (PIS) by using ozone micro–nano bubbles (O3-MNBs) was proposed. The effect of PIS containing sodium alginate (SA) and O3-MNBs on the preservation of small yellow croaker (Larimichthys polyactis) was investigated. The results indicate that using SA solution containing O3-MNBs instead of only SA solution resulted in quicker production of PIS by promoting ice nucleation and eliminating supercooling. The distribution and positive effect of O3-MNBs as a nucleation agent on freezing characteristics were discussed. Microbial concentrations, pH, total volatile basic nitrogen, and thiobarbituric acid reactive substance content were also examined. Storage in novel PIS (containing O3-MNBs) had higher performance than storage in flake ice or conventional PIS due to the strong bacteriostatic ability of O3. Therefore, O3-MNBs injection can be used as a novel method for PIS production and the preservation of fresh marine products.

In the present study, germinated brown rice (GBR) from three Japonica and three Indica rice cultivars were subjected to metabolomics analysis and volatile profiling. The statistical assessment and pathway analysis of the metabolomics data demonstrated that in spite of significant metabolic changes in response to the germination treatment, the Japonica rice cultivars consistently expressed higher levels of several health-promoting compounds, such as essential amino acids and γ-aminobutyric acid (GABA), than the Indica cultivars. No clear discriminations of the volatile profiles were observed in light of the subspecies, and the concentrations of the volatile organic compounds (VOCs), including alkenes, aldehydes, furans, ketones, and alcohols, all exhibited significant reductions ranging from 26.8% to 64.1% after the germination. The results suggest that the Japonica cultivars might be desirable as the raw materials for generating and selecting GBR food products for health-conscious consumers.

Food quality and safety are paramount in preserving the culinary authenticity and cultural integrity of Chinese cuisine, characterized by intricate ingredient combinations, diverse cooking techniques (e.g., stir-frying, steaming, and braising), and region-specific flavor profiles. Traditional non-destructive detection methods often struggle with the unique challenges posed by Chinese dishes, including complex textural variations in staple foods (e.g., noodles, dumplings), layered seasoning compositions (e.g., soy sauce, Sichuan peppercorns), and oil-rich cooking media. This study pioneers a hyperspectral imaging framework enhanced with domain-specific deep learning algorithms (spatial–spectral convolutional networks with attention mechanisms) to address these challenges. Our approach effectively deciphers the subtle spectral fingerprints of Chinese-specific ingredients (e.g., fermented black beans, lotus root) and quantifies critical quality indicators, achieving an average classification accuracy of 97.8% across 15 major Chinese dish categories. Specifically, the model demonstrates high precision in quantifying chili oil content in Mapo Tofu with a Mean Absolute Error (MAE) of 0.43% w/w and assessing freshness gradients in Cantonese dim sum (Shrimp Har Gow) with a classification accuracy of 95.2% for three distinct freshness levels. This approach leverages the detailed spectral information provided by hyperspectral imaging to automate the classification and detection of Chinese dishes, significantly improving both the accuracy of image-based food classification by >15 percentage points compared to traditional RGB methods and enhancing food quality safety assessment.

Mass transfer is central to food processing but remains difficult to quantify because food materials are heterogeneous, multiphase, porous, biologically structured, and dynamically changing. Under these conditions, experiments alone cannot fully capture the spatiotemporal complexity of transport behavior, making modeling and simulation essential for mechanism interpretation, process prediction, and engineering optimization. Existing reviews mainly address specific operations or numerical methods, with limited synthesis of governing equations, simulation workflows, application implementation, and practical applicability. This review examines food mass transfer by linking coupled momentum, heat, and mass transfer laws with governing equation selection, simulation workflow, and representative food processing applications. Governing formulations for Fickian diffusion, conservation-based transport, heat–mass coupling, multicomponent transfer, Darcy-type porous-medium flow, and related model extensions are summarized, together with their assumptions, geometric applicability, and dimensionless criteria. A unified simulation workflow is then organized, covering transport type identification, governing equation and physical model selection, geometric representation, parameter determination, initial and boundary condition specifications, numerical method and simulation tool selection, numerical implementation, validation, and transferability assessment. Representative applications are discussed for drying, heat–mass coupled processes, multicomponent transfer, transport in porous foods, and redistribution in multi-ingredient or multilayer foods. Overall, future progress requires more integrated, structure-aware, experimentally validated, transferable, and application-oriented simulation frameworks.
