Food neophobia (FN) is associated with reduced quality of diet in adults; thus, the understanding of the relationship between FN and food consumption in more depth appears to be a key issue. The aim of the study was to assess the relationship between food neophobia, dietary patterns, food choice motives, and food label reading in the group of adults. Data were collected using the computer-assisted personal interviewing technique (CAPI). A cross-sectional quantitative survey was carried out in November–December 2017 in a sample of 1017 Polish adults. The questionnaire used in the study included the Food Neophobia Scale (FNS), the Beliefs and Eating Habits Questionnaire (KomPAN), and questions regarding food choice motives, reading food labels, and sociodemographic characteristics. The food neophobics were older, had a lower level of education, and had higher BMI compared to others. Compared to others, among the food neophobics, there were more people who often consumed vegetables, fruit, meat, and meat products and who rarely consumed functional and convenience food, sweets, and sweetened beverages. When choosing food, more food neophobics chose healthy and tasteless food products, while more food neophilics chose unhealthy and tasty products. More food neophobics declared not reading price and shelf-life information on food labels compared to the other two groups. Although food neophobia may make adaptation to dietary recommendations difficult, health-promoting features of the diet were observed within the food neophobics. Actions focusing on food choice motives may help even more to limit the effects of food neophobia in adults. Further research is recommended to confirm the observed relationships under different sociocultural conditions.

Somatotype characteristics are important for the selection of sporting activities, as well as and the prevalence of several chronic diseases. Nowadays the most common method of somatotyping is the Heath–Carter method, which calculates the somatotype base on 10 anthropometric parameters. Another possibility for evaluation of somatotype gives commonly used bioelectrical impedance analysis), but the accuracy of the proposed formulas is questioned. Therefore, we aimed to investigate the possibility of applying an artificial neural network to achieve the formulas, which allow us to determine the endomorphy and mesomorphy using data on body height and weight and raw bioelectrical impedance analysis data in young women. The endomorphy (Endo), ectomorphy (Ecto), and mesomorphy (Meso) ratings were determined using artificial neural networks and the Heath–Carter method. To identify critical parameters and their degree of impact on the artificial neural network outputs, a sensitivity analysis was performed. The multi-layer perceptron MLP 4-4-1 (input: body mass index (BMI), reactance, resistance, and resting metabolic rate) for the Endo somatotype was proposed (root mean squared error (RMSE) = 0.66, χ2 = 0.66). The MLP 4-4-1 (input: BMI, fat-free mass, resistance, and total body water) for the Meso somatotype was proposed (RMSE = 0.76, χ2 = 0.87). All somatotypes (Endo, Meso and Ecto) can be calculated using MLP 2-4-3 (input: BMI and resistance) with accuracy RMSE = 0.67 and χ2 = 0.51. The bioelectrical impedance analysis and Heath–Carter method compliance was evaluated with the statistical algorithm proposed by Bland and Altman. The artificial neural network-based formulas allow us to determine the endomorphy and mesomorphy in young women’s ratings with high accuracy and agreement with the Heath–Carter method. The results of our study indicate the successful application of artificial neural network-based model in predicting the somatotype of young women. The artificial neural network model can be practically used in bioelectrical impedance analysis devices in the future.

A comprehensive approach to the identification of the relationship between behaviors limiting nutrition mistakes, nutrition knowledge, and physical activity in the context of the family environment has not yet been widely explored. We aim to identify patterns of avoiding nutrition mistakes in high school students from Warsaw, Poland, and to assess their associations with nutrition knowledge (NK), physical activity (PA), body mass index (BMI), demographic, and family environment characteristics. A cross-sectional study involving 616 high school students, aged 16–19, was conducted. The data were collected by distributing questionnaires. The k-means method was used for cluster analysis, and logistic regression was used to assess the adherence to identified patterns. We identified three patterns: Prudent Ones (45%), Inconsequent (39%), and Rebels (16%). About 70% of adolescents had insufficient NK. The adherence to the Rebels pattern was lower by 85 % in girls, by 68% in students with younger siblings, and was about 4.0-times higher in children of mothers with primary education, 2.4 times higher in students with insufficient NK, and 1.9-times higher in students living in a family with more than 4 persons. The groups of adolescents with feature characteristics of the Rebels and Inconsequent are possible targets for intervention and require further in-depth research to explain their lack of attempts to avoid nutrition mistakes. The results clearly indicate the necessity of including metropolitan teenage boys in effective nutritional education for the rationalization of their dietary behavior.

The aim of the study was to explore the associations between perceived health and nutrition concerns, sociodemographic characteristics and unhealthy dietary patterns in a representative group of Polish adults. The data were collected in 2017 through a cross-sectional quantitative survey under the National Health Program 2016–2020. Logistic regression models were used to analyze the data. It was found that higher health concerns decreased the chances of adhering to upper tertiles of “Fast food & alcohol” and “Refined food & sweetened beverages” dietary patterns (DPs), thus displaying less frequent consumption of such foods. No relationship was found between health concerns and adhering to the “Fat food” and “Butter” DPs. Nutrition concerns increased the likelihood of frequent consumption of foods from “Fast food & alcohol” DP. Women were less likely to adhere to unhealthy eating patterns than men, while older people were less likely to often consume fast food, alcohol, or refined food and sweetened beverages. Findings of this study showed that concerns about health or nutrition were differently associated with dietary patterns and consumption of unhealthy foods. These relationships should be considered when developing interventions to address health-related lifestyle changes. However, further research is needed to identify cause-effect relationships between these variables.

The use of dietary supplements (DSs) has been steadily increasing all over the world and additionally, the sales of DSs have dynamical increased in the wake of coronavirus disease 2019 (COVID-19) in most of the countries. We investigated DSs phenomenon in 2020 through (1) exploration of Google searches worldwide and in Poland (with Google Trends (GT) tool), and (2) analyses of results of PLifeCOVID-19 Online Studies conducted during the first and second wave of the pandemic. The conducted GT analysis and cross-sectional studies revealed that during the COVID-19 outbreak in March 2020, the interest in immune-related compounds and foods like vitamins C and D, zinc, omega-3, garlic, ginger, or turmeric, as well as their consumption increased. Improving immunity was the main reason behind the supplementation and changes in consumption of pro-healthy foods. GT analysis has shown these interests were positively correlated with the interest in COVID-19, but adversely with cumulative cases or deaths. Respondents tended to start supplementation during the first COVID-19 wave rather than the second one. Except for the role of vitamins D and C, zinc, and selenium in patients with deficiencies of those nutrients, there are no clear and convincing studies that support the role of DSs use in COVID-19 prevention and treatment in healthy, well-nourished individuals. Moreover, as the risk of elevated intake of some nutrients due to the popularity of DSs exists, effective education of consumers in rationale use of DSs and health-protecting behaviors against COVID-19 should be developed.

There is limited information on the relationships between restrictions linked to COVID-19 and changes in body weight. The aim of the study was to identify the body weight changes and their determinants in the nutritional and socio-demographic context during the COVID-19 pandemic in Polish women. During lockdown in Poland, 34% of women gained weight, while 18% of women reduced weight. As many as 44% of women with obesity before the pandemic increased their body weight, and 74% of women that were underweight reduced their body weight. In a group with weight gain, women increased their body weight by 2.8 kg on average and around 65% of them increased their total food intake. Unhealthy dietary changes and the negative lifestyle changes that comprised of an increase in screen time and a decrease in physical activity were found as key factors associated with weight gain. A higher risk of weight gain was associated with being obese before the pandemic or living in a macroeconomic region >50% of EU-28 GDP, while those younger in age and carrying out remote work had a higher chance of weight loss. Concluding, the specific conditions during lockdown worsened the nutritional status, which may increase the risk of complicatedness and mortality from COVID-19. It seems advisable to create dietary and lifestyle recommendations tailored to the individual needs of women who are underweight or have excessive body weight. More attention should be paid also to environmental impacts. Both, the reduction of excessive body weight and the maintenance of a normal weight should be based on the principle to eat and live sustainably and healthily.

The present study aimed to identify patterns of dietary changes during the COVID-19 pandemic and their associations with sociodemographics, body mass index (BMI) before pandemic, and lifestyle changes in Polish adults and to examine the effects of lockdowns on dietary–lifestyle changes. This study used a cross-sectional online survey to collect data. The k-means algorithm was used to determine of patterns of dietary changes, and logistic regression analyses were performed. During the study period, 43% of respondents decreased physical activity (PA), 49%—increased screen time, and 34%—increased food consumption. Among the three dietary changes patterns, two opposite patterns were found: Prohealthy (28% participants) and Unhealthy (19% participants).The adherence to the Prohealthy pattern was negatively associated with age, but positively with being overweight (aOR 1.31) or obese before pandemic (aOR 1.64). Residing in a macroeconomic region with GDP > 100% decreased adherence to the Prohealthy (aOR 0.73) but increased adherence to the Unhealthy pattern (aOR 1.47). Adults over 40 years old, those living with children, unemployed, those living in a region with a higher GDP, and those not consuming homemade meals could be more exposed to unhealthy behaviors. From a public health perspective, enhancing the message “to be active” during the compulsory isolation period should be prioritized.

The effect of α-tocopherol supplementation on adaptation to training is still equivocal. The aim of the study was to determine the effect of training and α-tocopherol supplementation on α-tocopherol and thiobarbituric acid reactive substance (TBARS) concentration in the rat liver, heart, muscles, and testes. Male Wistar rats ( n = 32 ) were divided into four groups (nonsupplemented, not trained—C; nonsupplemented, trained—CT; supplemented, not trained—E; supplemented and trained—ET). During the 14-day experimental period, 2 mg/d of vitamin E as α-tocopherol acetate was administered to the animals (groups E and ET). Rats in the training group (CT and ET) were subjected to 15 minutes of treadmill running each day. The α-tocopherol levels in rat tissues were assessed using high-performance liquid chromatography (HPLC). Lipid peroxides were determined by TBARS spectrophotometric method. α-Tocopherol had a significant impact on α-tocopherol concentration in all tissues. Training increased the α-tocopherol concentration in the heart and muscles but reduced it in the liver. Training also caused increased lipid peroxidation in the muscles, heart, and testes; but a higher α-tocopherol content in tissues reduced the TBARS level. The main finding of the study is that impaired α-tocopherol status and its adequate intake is needed to maintain optimal status to prevent damage to the skeletal and cardiac muscles as well as the testes in growing individuals.

W ostatnich latach wzrosło zainteresowanie stylem życia osób starszych, w tym żywieniem, jednak nadal niedostateczna jest wiedza o specyfice żywienia tej grupy populacyjnej zamieszkującej wieś. W przeprowadzonym badaniu własnym zauważono częste spożycie mięsa i wędlin, potraw smażonych, słodyczy oraz częste dodawanie cukru do produktów i napojów, co najbardziej było widoczne u mężczyzn. Znacząca większość badanych nie dysponowała odpowiednimi środkami finansowymi na zakup żywności. Najczęstszymi czynnikami decydującymi o wyborze żywności przez badane osoby były względy smakowe, przyzwyczajenia, cena produktów, względy zdrowotne, łatwość dostępu, reklama. W badanej grupie osób starszych stwierdzono wiele nieprawidłowych zachowań żywieniowych, stanowiących ryzyko niedożywienia lub zespołu metabolicznego, co w efekcie może prowadzić do pogorszenia jakości ich życia. Konieczne zatem wydaje się podejmowanie wszelkich działań edukacyjnych skierowanych do osób starszych mieszkających na wsi oraz ich opiekunów, ale także zwrócenie uwagi lekarzy na ten problem. Thiamine is recognized as a cofactor for many enzymes involved in intermediary metabolism responsible for energy production. Animal model of thiamine deficiency (TD) included direct evaluation of glucose uptake by estimation of 3 H-deoxyglucose transport across red blood cells membranes and β-oxidation of fatty acids in isolated leucocytes. Feeding of animals with the thiamine-deficient diet (0.018 mg/kg diet) for 30 days resulted in disturbances in energy production. The thiamine intake was limited not only by vitamin B1 deficiency in the diet, but also by time-dependent drop of feed consumption by rats fed this diet. At the end of experiment, diet consumption in this group of rats was 52% lower than in the control group. This was accompanied by low glucose uptake by erythrocytes of rats suffering vitamin B1 deficiency for longer time. At the end of experimental period, glucose uptake was over 2 times lower in TD erythrocytes than in control RBC. Such drop of energy production was not compensated by delivery of energy from fatty acid degradation. In leucocytes from TD rats, the β-oxidation was also suppressed. Observed significant decrease of serum insulin from 2.25 ± 0.25 ng/ml (day 0) to 1.94 ± 0.17 ng/ml (day 30) might have significant impact on observed energy production disorders. The results from this study indicate that the thiamine deficiency significantly reduces feed intake and causes modest abnormalities in glucose and fatty acid utilization.

This review aims to present the importance of nutrients for thyroid health in light of autoimmune Hashimoto’s disease. Authors focus mainly on vitamin D and selenium function in the body, metabolism, serum concentration in patients, replenishment outcome after singular or combined the treatment and dose. Vitamin D is essential for immune regulation and yields inflammatory properties. Selenium plays an important role in thyroid metabolism by protecting it from oxidative damage during iodine metabolism and by taking part in thyroid hormone production. Hashimoto is a complex disease and cross-curricular therapies probably will find more interest than one-way therapy.

Recent studies have shown that naturally occurring substances found in the food of the daily human diet are important for preventing chronic non-communicable diseases. One of them is beta-glucan, which is a natural polysaccharide, occurring in plant cell walls, mainly oats, barley and wheat. It is also present in baker’s yeast cells, fungal cell walls, and some microorganisms. Beta-glucan belongs to one of the dietary fiber fractions, which are attributed a number of beneficial health properties, including the prevention and treatment of certain digestive diseases and supporting the immune system. This compound has biological activity that depends on the size, molecular weight, conformation, frequency of bonds, solubility and changes in structure. Beta-glucan reduces cholesterol and glucose concentrations in the blood, which reduces the risk of cardiovascular disease and diabetes. In addition to its effects on lipid levels and glucose metabolism, beta-glucan also exhibits antioxidant properties by scavenging reactive oxygen species, thereby reducing the risk of diseases, including atherosclerosis, cardiovascular diseases, neurodegenerative diseases, diabetes, and cancer. Immunostimulatory and antitumor effects have also been reported. The immunostimulatory activity of beta-glucan occurs as a result of its attachment to specific receptors present on the immune cell surface. Beta-glucan belongs to the group of prebiotics which stimulate the growth and activity of the desired natural intestinal microbiota, while inhibiting the growth of pathogens. It plays an important role in the proper functioning of the gastrointestinal tract and preventing inflammation as well as colon cancer. Such a number of health benefits resulting from the properties of beta-glucan may play a key role in improving health and preventing chronic non-communicable diseases, such as diabetes, hypercholesterolemia, obesity, cardiovascular diseases, and cancer.

The relationship between energy value and nutrients intake and the body shape and size parameters (weight, height, waist and hip circumferences) has become an interesting research area for nutritionists and dieticians. The aim of this study was to determine the relationship between the body shape and size parameters (weight, height, waist and hip circumferences), somatotype (according to the Rohrer (RI) index) and energy value and nutrients intake of women. The study was conducted in 2014 and 2016 on 148 female volunteers aged 57-88 from the Mazovian and Lublin province (Poland). Sample selection was targeted at elderly people with different body types. The exclusion criteria were: multi-organ failure, cancer and disability. Then among the subjects, a survey was conducted, that included demographic data, lifestyle, health status and vitamins and minerals supplements use. Food intake has been assessed using a 3-day dietary food records. The somatotype was determined using the RI with the Curtis key, classifying the subjects as ectomorphic (n=30), mesomorphic (n=31) and endomorphic (n=87). The somatotype was significantly related to place of residence, physical activity, waist and hip circumference, WHR and BMI index, total protein intake, animal protein intake, vitamin E intake (p≤0.05) and to fat, phosphorus and thiamine intake (p≤0.1). The obtained results showed that the place of residence, physical activity, chronic diseases, the use of specialized diet, body weight fluctuations, BMI and WHR were different depending on the somatotype in the examined group of women. Endomorphic subjects had significantly greater waist and hip circumference and diastolic blood pressure compared to the other somatotypes. The somatotype had only a significant effect on total protein, animal protein and vitamin E intake, and ectomorphic elderly women may be particularly susceptible to nutrient deficiencies. Due to the risk of macronutrient, vitamin and mineral deficiencies in the diets of the examined women, it seems necessary to educate this group as well as caregivers and doctors in the area of nutrition adapted to the needs of the elderly.

The aim of the study was to verify the hypothesis that β-carotene, vitamin E, vitamin C administered individually or in combination may differently modify their levels in blood plasma being also markers of the oxidative stress. Male Wistar rats were supplemented antioxidants per os (α-to-copherol - 2 mg/d, ascorbic acid - 12 mg/d, β-carotene - 1 mg/d), both individually or in combination of 2 or 3, for 14 days. During experiment, half of the animals in each group (n=8) were subjected to treadmill exercise for 15 min at the speed of 20 m/min, to induce oxidative stress. Vitamins in rat plasma were assessed by the high-performance liquid chromatography (HPLC). Results suggest that vitamin E and C supplemented simultaneously may provide some benefit during physical exercise. The significant influence of administered α-tocopherol acetate and physical exercise on the level of α-tocopherol in the plasma was observed. Thus only the concentration of α-tocopherol in blood may be treated as a marker of oxidative stress.
