Prof. Dr. Xiaoxiong Zeng is a Professor and Doctoral Supervisor of the School of Food Science and Technology at Nanjing Agricultural University. He received his Ph.D. in Bioresource Science from the Gifu University Graduate School. He has studied and worked at Shizuoka University, Gifu University, and the National Institute of Advanced Industrial Science and Technology. Currently, he is mainly engaged in teaching and research work in functional foods, food nanotechnology, food carbohydrates, etc.
