Dr. Luis Mojica currently works as an Investigator at the Tecnología Alimentaria, Centro de Investigación y Asistencia en Tecnología y Diseño del Estado de Jalisco (CIATEJ), Zapopan, Mexico. He holds a Ph.D. in Food Sciences and Nutrition gained from the University of Illinois at Urbana-Champaign. His research sublines are nutrigenomics, development and formulation of functional foods. Bioactive food compounds with beneficial health effects. Effect of bioactive peptides and phenolic compounds on non-communicable diseases. His industry areas are the design and evaluation of nutraceutical and functional foods and ingredients, ingredients derived from proteins and bioactive peptides.
