Diego Moreno received his Ph.D. in biological sciences from the University of Granada, Spain, in 2000. He currently works as a scientific researcher in the Research Group "Laboratorio de Fitoquímica y Alimentos Saludables" (LabFAS), in the Department of Food Science and Technology at CEBAS, CSIC (Spanish National Research Council), Campus Universitario de Espinardo, 25, Murcia, Spain. His previous positions were as a Staff Scientist at CEBAS-CSIC (2008–2018), "Ramón y Cajal" Postdoc (2006–2007), and "CSIC I3P-Postdoc" (2005) Associate upon return to Spain. He also owned research training abroad as a postdoctoral associate in the Ilya Raskin’s Lab at Rutgers University-New Brunswick, NJ, USA (2001–2004). His research interest is the biostimulation of the bioactive composition of foods of plant origin (bioactive and bioavailable phytochemicals and metabolites) in connection to human health (obesity and inflammation). The current active projects of Agri-Food and Nutrition Research and Innovation are focused on the development and evaluation of new functional ingredients and foods enriched in bioactive phytochemicals to modulate energy metabolism (inflammation, obesity, diabetes, glucose, and lipid metabolism).
