I am a Full Professor of Organic Chemistry at the University of Barcelona (UB). My research specializes in the study of bioactive natural compounds found in foods, their metabolites, and the impact of food processing on their stability and bioavailability. I focus on the characterization, metabolism, and health benefits of polyphenols and other phytochemicals, aiming to understand their role in nutrition and their effects on human health.
