Dr. Sunil K. Panchal started his current position as a Lecturer in Nutrition and Food Science at the School of Science at Western Sydney University in 2020. He completed his bachelor’s degree in 2005 and master’s (Biochemistry) in 2007 from Nagpur University, India. He earned
a Doctor of Philosophy in Biomedical Science in 2012 from the University of Southern Queensland (USQ). During his PhD and postdoctoral research (2012–2019) at USQ, his research focused on the characterisation of potential health benefits associated with food components, including anthocyanins. His current research focus is the valorisation of food waste and by-products for the isolation of nutraceuticals.
