I am Yassine Jaouhari, PhD, a Postdoctoral Researcher at the Food Chemistry, Nutrition and Biotechnology Unit, Department of Pharmaceutical Sciences, University of Piemonte Orientale (Novara, Italy). I obtained my degree in Pharmaceutical Sciences in 2019 and spent a brief period working in food companies, gaining practical insight into industrial food processing and product development. I then completed my PhD focusing on the valorization of industrial food by-products through green extraction technologies and advanced analytical techniques for the recovery and characterization of bioactive compounds with applications in the nutraceutical, food, and cosmetic sectors. I was also a visiting researcher at the University of Vigo (Spain), where I further developed my expertise in sustainable extraction processes and analytical methodologies. My research focuses on circular economy strategies in food systems, green technologies, and the development of functional bioactive ingredients.
