The Food and Agriculture Organization of the United Nations supports the production of edible insects as a promising and sustainable source of nutrients to meet the increasing demand for animal-derived products by the growing world population. Even if insects are part of the diet of more than two billion people worldwide, the practice of eating insects (entomophagy) raises challenging questions for Western countries where this is not a habit. The research applied the Rasch models and showed that, in the case of hunger or need, 70.8% of the sample declared that they would be willing to eat insects. The willingness to habitually consume and pay for insect food is very low, but the percentages are higher than people who had actually had insect tasting experiences. This demonstrates that a communication process is necessary that aims to overcome psychological/cultural barriers. Only in this way will it be possible to increase the propensity to consume insects.

The purpose of this study is to develop a method to identify the radical changes in the Mediterranean adequacy index (MAI) trend for monitoring and modifying food and prevention policies. The development of a statistical solver demonstrates that the evolution of the MAI over time (1961-2013) in the EU countries, the USA and Japan is at least bi-parted. In most countries, often two successive conflicting tendencies emerge, whose intersection is signaled by a turning point. The framework of the “knowledge-based view” can help determine whether or not the slopes of the new trend are idiosyncratic with WHO objectives to prevent chronic diseases. Sustainably fighting against the rise in coronary heart disease (CHD) requires to incentive both demand and supply of food products Mediterranean-intensive, revealing by solver use the MAI hidden turning-points . This study allows policymakers to improve their planning, prevention and monitoring capabilities through more exact projections concerning both Mediterranean food markets and emerging CHD risks.

The paper focuses on environmental awareness towards the protection of Alpine areas, and presents the results of a research aimed at assessing people’s awareness in regards to certain topical environmental issues such as protected areas, ecological connectivity, and wildlife. The study area is the Julian Prealps Natural Park, in the region of Friuli Venezia Giulia (Northeast Italy). In order to obtain a measure of “environmental awareness”, the Rasch model was applied. It allowed us first to identify which items are most suitable for this. The results obtained show that people are quite aware of some issues, e.g. that wellbeing is related to greener areas and that they can change things to solve environmental problems. We also found that it is easier to agree with items relating to the environment in general than with more specific issues, probably due to a lack of knowledge. However, the provision of pertinent information, in our case on ecological connectivity, can increase the level of environmental awareness. The model also showed that the level varies according to certain sociodemographic characteristics, particularly gender and age. These results could serve as a starting point for planning effective information activities aimed at raising environmental awareness and, possibly, bolstering participation in initiatives for protecting Alpine areas.

Important sources of risk in agriculture are yield and price fluctuations caused by unpredictable and uncontrollable events, inducing income volatility and adding considerable complexity to farmers’ decisions. The literature suggests that these events could affect farmers’ risk aversion in decision making and justify their preferences for risk minimizing and safety-first survival, rather than a profit maximization strategy. The aim of this study is to test this hypothesis by using a quadratic programming in linearized version and the sumex utility function, which is representable as sum of products of polynomials and exponential (or “polynex”) functions to simulate risk aversion for specific traits of the E-V frontier (Nakamura, Mathematical Soc Sci 31:39–47, 1996). The linear approximation of the utility function is obtained with the MOTAD approach, consisting in the minimization of errors generated by total absolute deviations of gross income from the expected value (Hardaker et al. Rev Mark Agric Econ 59:9–22, 1991). This method allows different portfolio simulations to be run of selected cereal and oilseed crops as risky prospects, by varying the risk parametrically. The results obtained confirm the hypothesis that risk affects farmers’ decisions and that crop diversification is a viable strategy as a hedge against risk.

California is the largest agricultural producer in the United States and local dairy industry produces 21.5% of the national milk supply. There are 1470 dairies, 1789 million dairy cows and a total annual milk production of 18 million metric tons. The amount of dead cows to be disposed of is remarkable in intensive farming and it increases in periods of extreme weather events, such as drought in California. Composting of bovine mortalities is prohibited in California as a means of disposal of carcases, and can only be done under an emergency declaration. Composting is an effective disposal method that can aid in carcase disposal, especially during an emergency. The objective of this study was to use screened dairy manure solids (SDMS) as the composting amendment for carcase decomposition. Our hypothesis was that temperatures would be sufficiently high and of sufficient duration to destroy most bacteria within the carcases and that the leachate from the carcases would penetrate less than one foot into the underlying soil. No significant amounts of leachate were noted in the collection pipes buried beneath either soil type. Total bacterial counts exceeded 1×106 CFU/ml in approximately 19% of the swab samples from the sample collection pipes. The sandy soil had higher bacterial counts than the clay soil. Results of these trials indicate that adult dairy cows can be successfully composted without significant impact on the nearby surrounding environment. The concept of intermediate market trade contacts (ITC) have been developed as transactional capital resource measured by business-to-business purchases or sales. In the framework of the resource-based view, only valuable, rare, inimitable and non-substitutable firm's resources might be considered as a source of sustained competitive advantage. Supplydriven Ghosh's model has been applied to Eurostat symmetric input-output tables of 23 EU countries. A strong and direct relationship between market horizontal multiplier for productive use and indirect ITC frequency has been found for recreational, cultural and sporting activities. Consequently, valuable and distinct hidden-client purchases could be used as a resource favoring firm development, innovation and territorial integration strategies.

The approach to the territory’s biocultural fingerprint can be very important when it comes to studying uniformities and differences among different regions. By examining the code of the attributes and the features, it is therefore possible to determine the landscapecultural uniformities which can create a common project for tourism and residential attraction. The differences underline emergencies of a cultural, natural, agricultural, and wine-gastronomic nature which are capable not only of rendering a territory identifiable but also of presenting it to integrated tourist packages and residential perspectives. The objective of this research is to verify the competitive ability which can enhance the potentialities of ‘territorial capital’. This comparative study amongst the fingerprints of the Lombardy and Veneto regions uses a model which can appraise the tourism and residential attraction determining the attributes’ code characterizing homogeneous sets of municipalities.

The main aim of this paper is to highlight the evolution of urban and peri-urban networks in view of their use by dwellers and visitors. It considers the knowledge as a part of a hidden permanent education form, and as a prerequisite for full enjoyment of available culture, sport and health facilities. Although, the objectives of the inhabitants and tourists are very different, their basic structural needs and the underlying methodology have common characteristics. In this prospective, the central element is the ability to build networks that connect the nodes of interest, which are functional (services at various levels), cultural (historical and artistic emerging features), and leisure (dedicated sport facilities and locations). Furthermore, the paper investigates the paths and times of networks connections, providing particular attention to multipurpose trips consistence of either dwellers or tourists.

This work utilizes Leontief input–output tables to establish, through new appropriate indicators (the new entry barriers and invasion indices), the strategy pursued by some branches of EU countries for diversifying production, so enriching thus the range of their secondary products. Our attention is focused on EU countries strategic perspectives of diversification by vertical integration, regarding in particular the potentiality of the main Agro-food Chain branches: “Agriculture, hunting and related services” and “Food and beverages”. In this context, we deal with the backward and forward linkages that are the expression of Agriculture and Food vertical integration potentialities through their secondary production in the main field of competence (core business) of the other that reaches a total of €55 billion. In this research, we observe some basic elements: (a) EU Agriculture takes advantage from the opportunity to diversify itself by vertical integration in the field of competence of Food and beverage. So Agriculture will ensure higher incomes and vital outlets for its survival. Food industry entry barriers are feeble and can be circumvented. (b) Food and beverages does not want or perhaps is not able to exploit the upstream integration potentiality with Agriculture due to the high entry barriers that the very Agriculture has built to isolate its core business (endogenous barriers) or that it suffers (exogenous barriers). On the contrary, it is not uncommon that Food industry invests in foreign agriculture and becomes involved in intra and extra-EU relocation diversifying itself in a context of multinational vertical integration.

Much attention has been paid to industrial differentiation versus specialization. In EU, the phenomenon of secondary production is important enough since it absorbs 6.3% of the total output at basic prices. Through the development of new symmetrical indicators, we point out the ability of economic branches to diversify, penetrate and invade others. This analysis is applied both to EU countries and to economic system branches, focusing the analysis on the challenges facing Agriculture and Food and beverage industry. We can assume that the most advanced countries belong to a post-modern or post-industrial stage of development. The only way to continue to stay on the market is to diversify production and to emphasize the search for a quality/price ratio attractive for the consumer. On the contrary, less advanced countries of Central and Eastern Europe are rather in the initial or intermediate stages of industrialization in which agriculture, crafts and traditional services still have a certain importance and, as we know, undertake more differentiated activities. What emerges is a watershed between continental and Mediterranean countries. Eastern Europe is still anchored to a traditional behavior. In synthesis we find three fundamental trends: (a) a long period continuity of those complementary activities that have always characterized agriculture; (b) the different structure of secondary production in the EU countries; (c) different barriers to entry, that explain asymmetries in the behavior of branches otherwise more or less related. Remark that these barriers may be not only physical or economical but also normative, thus introducing more differences in the behavior of different countries.
