Prof. Dr. Teresa Ayora-Talavera is a researcher at the Center for Research and Assistance in Technology and Design of the State of Jalisco AC. She has a Ph.D. in biotechnology from the Center for Research and Advanced Studies (2002). Currently, she is interested in the area of natural products, and her work is in the area of food development and the use of agro-industrial waste as a source of biomolecules for food additives for the production of functional foods, as well as and functionalized and biodegradable packages. She is a member of the National Researchers System of Mexico.
