Foodborne chemical exposure is a significant public health concern. Various chemical agents found in foods, including pesticide residues, heavy metals, natural toxins, compounds formed during food processing, and food additives, may result in carcinogenic or noncarcinogenic health effects in the long term. Along with discussing the main sources of dietary chemical exposure and its health impacts, this review article also covers the theoretical foundations and four main steps of chemical risk assessment. Furthermore, risk assessment approaches are investigated in the light of international organizations and guidelines, and the current debates and challenges within the field are underscored. Lastly, suggestions for safer food supply and potential future developments are presented. This comprehensive review may provide a current literature-based viewpoint on comprehending and addressing dietary chemical-associated public health issues.

Çalışmadaki bireylerin yalnızca %8.1’i sosyal medyadaki beslenme konulu paylaşımların yeterli bilgiyle hazırlandığını düşünürken, beslenme konulu paylaşımların bilgi düzeylerini arttırdığına inananların oranı %73.6’dır.

Passion fruit (Passiflora edulis) is consumed worldwide, and its processing generates a substantial amount of waste, particularly from the seeds and peels. This study investigated the potential of valorizing passion fruit seeds by adding them to high-fiber snack bars. Seed-enriched snack bars were evaluated for their sensory qualities, antioxidant activities, and nutritional compositions. Seed addition markedly increased the dietary fiber content (from 4.17% to 5.66%), fat content (from 15.02% to 19.63%), and antioxidant activity (e.g., 83.38% vs. 82.47% DPPH inhibition at 50 ppm) compared to the control. This was mainly due to the presence of piceatannol, a potent bioactive molecule. The overall phenolic content decreased from 90.11 to 65.37 mg GAE/100 g, suggesting intricate matrix interactions. The control bars exhibited a higher overall acceptability score, whereas the seed bars remained within the acceptable sensory range and required only minor texture adjustments. Microbiological analyses confirmed that both formulations retained their safety for 7 days at +4 °C, with appropriate levels of yeast and total viable count and no mold growth. These results suggest that passion fruit seeds have the potential to be used as a sustainable functional food ingredient. Further research is warranted to improve the sensory qualities and shelf-life stability.

Background/Objectives: The global population is rapidly aging, raising interest in dietary practices for promoting the healthspan. This study aimed to comprehensively investigate the state of diet and longevity research over the past decade, addressing the lack of bibliometric synthesis within the field. Methods: A bibliometric analysis was performed using the keywords “diet” and “longevity” on English-language articles from the Web of Science database that were published from 2015 to 2024. Data were analyzed using Web of Science tools, InCites, and VOSviewer to identify trends in publication output, citation metrics, coauthorship networks, institutional contributions, and keyword co-occurrence patterns. Results: Overall, 2203 articles meeting the inclusion criteria were included in the analysis. Publication volume and citation counts gradually increased, peaking in 2021. Countries, including the United Kingdom, and organizations, such as the National Institutes of Health and Harvard University, had significant citation impact, and the United States and China led productivity. Molecular processes (oxidative stress and autophagy), dietary models (Mediterranean diet and calorie restriction), and public health issues (obesity and mortality) were the main thematic clusters. Model species, including Caenorhabditis elegans and Drosophila melanogaster, were frequently used. Regional disparities in research production and notable terminology variability were noted. Conclusions: This study emphasizes the development and diversity of nutrition and longevity research while highlighting novel molecular and translational topics. More international cooperation, uniform language, and multidisciplinary frameworks are warranted to promote equal scientific advancement worldwide and connect mechanistic discoveries with therapeutic outcomes.

Fried potato products are the largest dietary source of acrylamide, a potential carcinogen formed at high temperatures. Previous studies suggested that garlic powder could decrease the development of acrylamide; however, there has not been much focus on the effect of garlic extract. The aim of this study was to investigate the effect of garlic extract exposure on the development of acrylamide in French fries in popular home cooking techniques such as pan-frying, air-frying, and oven-frying. Initially, the antioxidative profile, total phenolic content, and chlorogenic acid content of garlic were analyzed. Subsequently, potatoes were treated with garlic extract and fried using pan-frying, air-frying, and oven-frying techniques. Acrylamide levels were then quantified through HPLC and compared to control groups. The findings showed that garlic exposure increased the acrylamide formation in French fries obtained with air-frying (311.95 ± 0.5 μg/kg) and with oven-frying (270.32 ± 23.4 μg/kg) (p < 0.005 *). This study offers new insights into varying acrylamide formation levels in domestic practices. Unlike previous studies, this study is the first to question the effect of aqueous garlic extract exposure. Further research is required to comprehend the interaction between garlic exposure and acrylamide formation in household settings.

This preliminary study evaluated changes in total phenolic content and catechin and epicatechin levels in commercially available green teas through an in vitro digestion. Samples (1.5% dry tea in 100 mL water at 80°C) were analyzed for total soluble solids, pH, and color. The initial total phenolic content ranged from 381.19–1779.50 µg gallic acid equivalent/mL, decreasing to 315.22–1266.37 µg/mL in the small intestine. Epicatechin decreased from 7.64–13.97 µg/mL to 4.53–9.19 µg/mL, while catechin dropped from 13.13–24.03 µg/mL to 5.43–14.03 µg/mL. Significant decreases occurred across digestion, indicating reduced bioaccessibility of green tea polyphenols that may influence antioxidant and health effects.
