Guillermo Ripoll has a PhD in "Ingeniería Agraria, Alimentaria, Forestal y del Desarrollo Rural Sostenible", Masters in Agrifood Biotechnology, Agricultural Engineer and Agricultural Technical Engineer. He is currently is a technician/researcher at the Animal Science Department, Agri-Food Research Center of Aragon (CITA, Spain). His main research interests are carcass, meat, and meat product quality, including shelf-life, intrinsic and extrinsic quality cues, and perception of consumers with a farm to fork approach. Areas or special interest are color, visual color perception, and near-infrared spectroscopy. Currently, he belongs to the research group "Sustainable Agrosilvopastoal and Food Systems (SAGAS)". His scientific activity developed within 47 regional (20, 8 as IP), national (24), and international (3) research projects. Currently, he is the "Animal Products Section" Editor-in-Chief of Animals. He has authored 125 peer-reviewed articles in SCI journals (Q1 52%, D1 25%). His papers have 2314 citations (h-index: 25). He has published 72 technical papers, 15 book chapters, and presented 150 communications at national (84) and international (76) conferences. Also, he is the co-inventor of the software Nodriza (registrered) and the utility model "Procedimiento de predicción de dureza de la carne de ganado vacuno mediante la detección de la mutación genética SNP98535683 (Thr182Ala) de la Calpastatina (CAST) y/o de la mutación genética SNP98545188 (CAST2)" (registered).
