Spectroscopic analysis was employed to evaluate the quality of three bell pepper varieties within the 350–1150 nm wavelength range. Quality parameters such as firmness, pH, soluble solids content, titratable acids, vitamin C, total phenols, and anthocyanins were measured. To enhance data reliability, principal component analysis (PCA) was used to identify and remove outliers. Raw spectral data were initially modeled using partial least squares regression (PLSR). To optimize wavelength selection, support vector machines (SVMs) were combined with genetic algorithms (GAs), particle swarm optimization (PSO), ant colony optimization (ACO), and imperial competitive algorithm (ICA). The most effective wavelength selection method was subsequently used for further analysis. Three modeling techniques—PLSR, multiple linear regression (MLR), and artificial neural networks (ANNs)—were applied to the selected wavelengths. PLSR analysis of raw data yielded a maximum R2 value of 0.98 for red pepper pH, while the lowest R2 (0.58) was observed for total phenols in yellow peppers. SVM-PSO was determined to be the optimal wavelength selection algorithm based on ratio of performance to deviation (RPD), root mean square error (RMSE), and correlation values. An average of 15 effective wavelengths were identified using this combined approach. Model performance was evaluated using root mean square error of cross-validation and coefficient of determination (R2). ANN consistently outperformed MLR and PLSR in predicting firmness, pH, soluble solids content, titratable acids, vitamin C, total phenols, and anthocyanins for all three varieties. R2 values for the ANN model ranged from 0.94 to 1.00, demonstrating its superior predictive capability. Based on these results, ANN is recommended as the most suitable method for evaluating the quality parameters of bell peppers using spectroscopic data.

Vibrational spectroscopy, including Raman and near-infrared techniques, enables the non-destructive evaluation of starch gelatinization, head rice yield, and aroma-active volatile compounds in parboiled rice subjected to varying soaking and drying conditions. Raman and NIR spectra were collected for rice samples processed under different conditions and integrated with reference analyses to develop and validate partial least squares regression and artificial neural network models. The optimized PLSR model demonstrated strong predictive performance, with R2 values of 0.9406 and 0.9365 for SG and HRY, respectively, and residual predictive deviations of 3.98 and 3.75 using Raman effective wavelengths. ANN models reached R2 values of 0.97 for both SG and HRY, with RPDs exceeding 4.2 using NIR effective wavelengths. In the aroma compound analysis, p-Cymene exhibited the highest predictive accuracy, with R2 values of 0.9916 for calibration, and 0.9814 for cross-validation. Other volatiles, such as 1-Octen-3-ol, nonanal, benzaldehyde, and limonene, demonstrated high predictive reliability (R2 ≥ 0.93; RPD > 3.0). Conversely, farnesene, menthol, and menthone showed poor predictability (R2 < 0.15; RPD < 0.4). Principal component analysis revealed that the first principal component explained 90% of the total variance in the Raman dataset and 71% in the NIR dataset. Hotelling’s T2 analysis identifies influential outliers and enhances model robustness. Optimal processing conditions for achieving maximum HRY and SG values were determined at 65 °C soaking for 180 min, followed by drying at 70 °C. This study underscores the potential of integrating vibrational spectroscopy with machine learning techniques and targeted wavelength selection for the high-throughput, accurate, and scalable quality evaluation of parboiled rice.

The analysis of static forces is essential in the storage of agricultural products because these forces are applied in fruits, vegetables, or grains that can lead to their permanent deformation. This mechanical damage increases the product waste. Given that the potato tuber is surrounded by other tubers in the storage, then every tuber is pressurized from all sides or so‐called triaxial stress. To measure the deformation of the specimens, a device was developed to conduct uniaxial and triaxial creep tests on the viscoelastic agricultural products (e.g., potatoes). Accordingly, the creep experiments were performed on potato samples for 5, 30, 60, 120, 240, 360, 420, and 480 min under the constant load of 72.5 N at 3 and 11 replications via uniaxial and triaxial tests, respectively. The results showed that in the creep test, the loading time was significant on the deformation of the specimens at the 0.05 level of probability. Triaxial test showed that the tuber deformation and strain of top layer were more than the middle and bottom layers. The results showed that the deformation of tubers under uniaxial test was more than triaxial one.
