Several billion microorganisms reside in the gastrointestinal lumen, including viruses, bacteria, fungi, and yeast. Among them, probiotics were primarily used to cure digestive disorders such as intestinal infections and diarrhea; however, with a paradigm shift towards alleviating health through food, their importance is large. Moreover, recent studies have changed the perspective that probiotics prevent numerous ailments in the major organs. Probiotics primarily produce biologically active compounds targeting discommodious pathogens. This review demonstrates the implications of using probiotics from different genres to prevent and alleviate ailments in the primary human organs. The findings reveal that probiotics immediately activate anti-inflammatory mechanisms by producing anti-inflammatory cytokines such as interleukin (IL)-4, IL-10, IL-11, and IL-13, and hindering pro-inflammatory cytokines such as IL-1, IL-6, and TNF-α by involving regulatory T cells (Tregs) and T helper cells (Th cells). Several strains of Lactobacillus plantarum, Lactobacillus rhamnosus, Lactobacillus casei, Lactobacillus reuteri, Bifidobacterium longum, and Bifidobacterium breve have been listed among the probiotics that are excellent in alleviating various simple to complex ailments. Therefore, the importance of probiotics necessitates robust research to unveil the implications of probiotics, including the potency of strains, the optimal dosages, the combination of probiotics, their habitat in the host, the host response, and other pertinent factors.

Citrus fruits, classified under the Rutaceae family and Citrus genus, are valued for their high nutritional content, attributed to their rich array of natural bioactive compounds. To ensure both quality and nutritional value, precise non-destructive testing methods are crucial. Among these, computer vision and spectroscopy technologies have emerged as key tools. This review examines the principles and applications of computer vision technologies—including traditional computer vision, hyperspectral, and multispectral imaging—as well as various spectroscopy techniques, such as infrared, Raman, fluorescence, terahertz, and nuclear magnetic resonance spectroscopy. Additionally, data fusion methods that integrate these technologies are discussed. The review explores innovative uses of these approaches in Citrus quality inspection and grading, damage detection, adulteration identification, and traceability assessment. Each technology offers distinct characteristics and advantages tailored to the specific testing requirements in Citrus production. Through data fusion, these technologies can be synergistically combined, enhancing the accuracy and depth of Citrus quality assessments. Future advancements in this field will likely focus on optimizing data fusion algorithms, selecting effective preprocessing and feature extraction techniques, and developing portable, on-site detection devices. These innovations will drive the Citrus industry toward increased intelligence and precision in quality control.

Globally, 50% of people consume rice (Oryza sativa), which is among the most abundant and extensively ingested cereal grains. Rice bran is a by-product of the cereal industry and is also considered a beneficial waste product of the rice processing industry. Rice bran oil (RBO) is created from rice bran (20–25 wt% in rice bran), which is the outermost layer of the rice kernel; has a lipid content of up to 25%; and is a considerable source of a plethora of bioactive components. The main components of RBO include high levels of fiber and phytochemicals, including vitamins, oryzanols, fatty acids, and phenolic compounds, which are beneficial to human health and well-being. This article summarizes the stabilization and extraction processes of rice bran oil from rice bran using different techniques (including solvent extraction, microwaving, ohmic heating, supercritical fluid extraction, and ultrasonication). Some studies have elaborated the various biological activities linked with RBO, such as antioxidant, anti-platelet, analgesic, anti-inflammatory, anti-thrombotic, anti-mutagenic, aphrodisiac, anti-depressant, anti-emetic, fibrinolytic, and cytotoxic activities. Due to the broad spectrum of biological activities and economic benefits of RBO, the current review article focuses on the extraction process of RBO, its bioactive components, and the potential health benefits of RBO. Furthermore, the limitations of existing studies are highlighted, and suggestions are provided for future applications of RBO as a functional food ingredient.

In recent years, oleosome-associated proteins (OPs) have gained increasing attention in the food and nutrition sectors due to their balanced amino acid composition and excellent functional properties. However, their low extraction yield, high hydrophobicity, and poor solubility hinder broader application in food systems. This review provides a concise overview of OPs’ structural features, current extraction strategies, and the impact of modification techniques on their structural and functional attributes. Special emphasis is placed on hybrid extraction methods that integrate physical treatments (e.g., ultrasound, heating, colloid milling) with traditional chemical approaches to enhance yield while preserving protein functionality. Furthermore, the review discusses how physical and chemical modifications effectively regulate OPs’ solubility, emulsifying capacity, aggregation behavior, and self-assembly characteristics. The regulatory mechanisms of different processing conditions on protein conformation and intermolecular interactions are summarized to guide functional optimization. Finally, the current technical challenges are outlined and future research directions are proposed, including the industrial scaling of hybrid extraction, precise control of structural modification, and application of OPs in emulsified and gel-based delivery systems. This work offers theoretical insight and practical guidance for the high-value utilization of OPs in food and related industries.

Monascus vinegar (MV), during whose brewing process Monascus spp. and polished rice (PR) are normally used as the starter and the raw material, respectively, is one of the traditional vinegars in China. In this study, the effects of three raw materials, including PR, unhusked rice (UR), and germinated UR (GR), on MV volatile compounds have been investigated. The results revealed that MV of GR (GMV), and its intermediate Monascus wine (GMW), exhibited the highest amount of aroma, not only in the concentrations but also in the varieties of the aromatic compounds mainly contributing to the final fragrance. Especially after three years of aging, the contents of benzaldehyde and furfural in GMV could reach to 13.93% and 0.57%, respectively, both of which can coordinate synergistically on enhancing the aroma. We also found that the filtering efficiency was significantly improved when UR and GR were applied as the raw materials, respectively. Therefore, GR might be more suitable raw materials for MV.
