Sustainable development is in many ways the fundamental basis of tourism. The importance and role of sustainable tourism development in the 21st century is at the center of this paper on eco-certificates and green procurement in the hotel industry, within the field of the responsible or green economy. The green hotel economy implies the selection of accommodation in environmentally responsible hotels and other facilities, which are directing their business operations towards green procurement, eco-labeling, and the responsible economy. This paper includes quantitative research of the attitudes of 506 international tourists, who expressed their views on their needs regarding eco-hotels and the green economy in the hotel industry. This research also included the collection of data on green (responsible) businesses by surveying 100 hotels situated in the capitals of southern Europe. Comparing results from hotels with the needs of tourists in terms of the green economy in the hotel industry, significant results were obtained that contribute to sustainable tourism development.

Mobile applications, as a very dynamic segment of modern ICT (Information and Communication Technology), are in widespread use in tourism. Tourist destinations are increasingly using mobile applications to manage the development of a destination product, that is, the applications themselves are seen as an important part of the destination product and the overall tourists’ experience. This paper focuses on mobile applications and their use in destination management and the achievement of overall tourist satisfaction. Special attention is paid to the use of mobile applications in the management of tourism development in Belgrade as well as the impact of mobile applications on tourists’ experience of Belgrade as a tourist destination.

This chapter focuses on the manifestations of the values of the gastronomic cultural heritage in geographically and ethnically different territories in southeastern European countries such as Serbia, Romania, Turkey, and Italy. The chapter explores how the development of gastronomy and the food heritage can help to protect rural heritage values. This study used qualitative method. Case studies were used to summarize the local survey results and to consider how an entrepreneurial culture can enhance locally produced food as a value-added touristic experience. Case study surveys in the four countries enable us to get an insight into the cultural values of the gastronomic heritage in each of them, to formulate gastronomic cultural heritage marketing development paths to continue to increase the demand for these values, and hence to revitalize economic activity in the local rural communities. There is a wide variety of different practices in different regions and countries.

This paper presents experimental research into the attitudes of tourists towards the significance of protected areas with regard to tourism in the Autonomous Province of Vojvodina, in the northern part of the Republic of Serbia. It is an area with significant rare plant and animal resources, as well as w?tlands, ecosystems, and hilly and mountainous areas. Several research methods have been used in the paper. The first method is to collect data using a written questionnaire that was completed by 215 visitors to different protected areas in AP Vojvodina. Their answers revealed their attitudes toward sustainable tourism in selected protected areas. After examining the differences in the answers using the Kruskal-Wallis test, the results of the survey conducted by the authors were examined by means of two comparative analyses of identical, related, and similar answers in selected case studies. Based on the results of the Kruskal-Wallis Test, it can be concluded that there is a statistically significant difference in the assessments of the importance of activities and the forms of tourism chosen when visiting protected areas. The most important forms of tourism are ecotourism and adventure tourism. Tourists also identified hiking, cycling, and wildlife watching as the most important activities.

Sustainable tourism development of the northern part of Serbia in Autonomous Province of Vojvodina aims to achieve ecological, sociocultural, and economic benefits. This means that all entities should be included in the planning and implementation of tourism, such as the local community, tourists, and state entities, while tourism activity should be focused on improving ecological principles and sociocultural conception in a destination. One of the models of this development is seen in specific products that can play a significant role in tourism development. Such an authentic product is wine, which has a very important role in the promotion of tourism. The aim of this paper is to explore Vojvodina—the region of Serbia—as a valuable wine tourism destination in the country, especially the experiences of the wine routes. We use descriptive statistics techniques to summarize and present the data and adopt a correlation analysis technique to describe respondents’ preference on the importance of the wine routes. In the empirical survey, the main conclusion is a positive correlation that by developing wine tourism in Vojvodina, we can influence economic development of the region.

Sustainable tourism implies preserved space, prevents ecological and socio-cultural devastation, but at the same time encourages tourism development. Their application and adequate implementation increases the chance of a tourist destination that will be able to develop sustainable tourism, so the aim of this paper is to separate characteristics and principles of sustainability on certain areas and to show their advantages and limitations. In this paper are introspected factors of tourism development, both in a positive and in a negative context. It was hypothesized that sustainable rural tourism in the Lower Danube region has a comparative advantage, but it is also a major challenge for the community. Methodological setting is qualitative, based on the contextual dimension of the data, empirical observations, exploratory research and observations. Obtained results show that the tourist offer of sustainable rural tourism in the Lower Danube region has its own unique values, which should continue to explore.

The Special Nature Reserve "Zasavica" is a significant wetland and Ramsar site of the southwestern part of Vojvodina Province (Northern Serbia). This complex of aquatic habitats has been formed by the effects of the Sava and the Drina rivers. This former riverbed of the Sava River and the today’s Zasavica stream makes the basic hydrographic resource of this protected area. The reserve is inhabited by numerous rare and endangered plant and animal species, which unitedly make rare biodiversity, unique in the country and the region. Whether the area of the Special Nature Reserve “Zasavica” represents a significant potential for the development of tourism will be concluded in this paper by using two scientific methods. The obtained results from a conducted questionnaire, as the first method, will be used to analyze the interplay of factors and their interrelations as potentials for sustainable tourism development, outlined in the Sustainable Tourism Development Strategy of Serbia. The obtained results can examine the main hypothesis that the SNR is a significant tourist potential for ecotourism both at the level of the Republic of Serbia and at the level of the countries in the region, such as Hungary, Romania, Bulgaria, Croatia, Bosnia and Herzegovina, as well as other European countries. By enhancing sustainable tourism and protecting the space of this reserve, and by implementing the national tourist offer, higher socio-cultural, economic and ecological benefits can be achieved.

Rudnik Mountain, as the most dominant mountain in the Šumadija region, is located about 100 km south of Belgrade, which is connected to Ibar highway. Because of its exceptional climatic conditions, in 1922 it was declared an air spa, and the geologic-geomorphological features (mountain peaks more than 1000 m above sea level, lookouts, caves, etc.), as well as the wealth of water and preserved flora and fauna, contributed to its excursion potential. Archaeological findings testify to early habitation of the area. In ancient times the mountain was the scene of mining, and remnants of the period before and after the arrival of the Romans, the Serbian medieval state, and Turkish times are preserved. The preserved cultural heritage (monasteries: Blagoveštenje, Voljavča, Vraćevšnica, Nikolje and Petkovica; the residence of Prince Miloš; the remains of medieval towns; Ostrvica and Gradovi; archaeological site Misa; remains of mining pits and localities; rich monumental complex, etc.) had a significant role in the development of mountain tourism in Rudnik Mountain in Serbia. Regionally recognizable as a year-round holiday destination with great potential for excursion, recreation, sports, health, and other forms of tourism development, Mountain Rudnik has, thanks to the rich cultural heritage, a chance for popularization through various forms of trips, excursions, schools in nature, recreational classes, and other programs of travel agencies intended for children and adults.

Serbia has numerous tourist resources which can be used for tourism development and it is base for strategic documents about tourism. Business tourism, for its economic contribution to tourist destinations is globally recognized. Preserved and unchanged natural environment, geodiversity and biodiversity are representing important resources for the development of business tourism in Serbia. Trips and excursions are constitutive part of modern business events and because of that diversity of natural and anthropogenic resources is one of the main drives of business tourism development. This paper focuses on identification of such resources and points on possibilities of their use in development of Serbia as destination of business tourism. Tourism is one of the best opportunities for a sustainable economic and social development for Serbia and this paper is trying to explain how business tourism resources, accommodation, tourist agencies specialized in business tourism should be developed and used by tourism policy makers.
