The aim of this study was to assess the quality and characterise a selection of honey varieties with the use of physicochemical, FTIR, and chemometric analysis. The research material consisted of monofloral nectar honeys of 5 distinct varieties: black locust, raspberry, oilseed rape, linden, and buckwheat. The contents of water, soluble solids, 5-hydroxymethylfurfural, free acidity, pH, electrical conductivity, and water activity were measured. Infrared spectra were measured within the spectra range from 3700 to 780 cm−1. The obtained results from the FTIR measurements for selected honeys showed the greatest changes in the area of the band maxima: 3333, 1641, 1453, 1248, 1184, 1033, and 985 cm−1. The identification of the origin and chemometric analyses were provided for the spectral regions with the maxima at approximately 3333 and 1641 cm−1 (vibrations from water fractions), 2935 and 2885 cm−1 (symmetrical and asymmetrical vibrations of the -CH2 and -CH3 groups), as well as the fingerprint region where varying intensities of the characteristic bands were observed. Chemometric analysis of the FTIR spectra confirmed the high quality of the analysed honey varieties as well as the differences also in their sugar fractions. The results obtained after employing PCA in the spectroscopic analysis of infrared spectra evidence high applicability of the methods of multi-dimensional statistical analysis in the determination of discrepancies, similarities, and structural characteristics of any given type of honey. A catalogue of FTIR spectra can be created to allow fast and cost-effective identification of honeys, compared to traditional methods.

The paper aimed to compare the quality of rapeseed and honeydew honey powders, obtained by two methods of spray drying—traditional at a high temperature (inlet air 180 °C) and innovative low-temperature spray drying with the use of dehumidified air as a drying medium (inlet air 75 °C). Total polyphenol content, antioxidant activity, and the content and types of aromatic compounds were determined. In addition, Fourier-transform infrared spectroscopy (FTIR) coupled with chemometrics analyses was done. Powders obtained by the low-temperature spray drying method (with dehumidified air) were characterized by a higher content of polyphenols, antioxidant activity, and aromatic compounds, compared to powders obtained by the traditional method. Honeydew honey compared to rapeseed honey was characterized by a higher content of polyphenols, antioxidant activity, and composition of aromatic compounds. The results proved that the production method had a higher impact on the final properties of powders than the type of honey.

We discuss, using recent results on the thermodynamics of multivalued logic, the difficulties and pitfalls of how to apply the Landauer’s principle to thermodynamic computer memory models. The presentation is based on Szilard’s version of Maxwell’s demon experiment and use of equilibrium Thermodynamics. Different versions of thermodynamic/mechanical memory are presented – a one-hot encoding version and an implementation based on a reversed Szilard’s experiment. The relationship of the Landauer’s principle to the Galois connection is explained in detail.

The paper explores the impact of electromagnetic stimulation of Ulstar alfalfa seeds on fresh mass yield, the quantum efficiency of the plants’ photochemical reactions, and the content of photosynthetic pigments in leaves. Before sowing, seeds were subjected to electromagnetic stimulation in the following configurations: control (C), no stimulation; stimulation with He–Ne laser light with the wavelength of 632.8 nm, surface power density of 3 mW·cm−2 and exposition time of 1 min (L1) or 5 min (L5); stimulation with alternating magnetic field with the induction of 30 mT and exposition time of 1 min (F1) or 5 min (F5). It was established that the variability of alfalfa yields at the onset of anthesis was dependent on weather conditions as well as, above all, on the electromagnetic stimulation employed. At the same time, the values of fresh mass yield of alfalfa and photosynthetic efficiency were higher in the first year of cultivation (2014) compared to the last year (2016). In terms of photosynthetic efficiency, the best results were observed for L1 and F5, respectively: 0.801 and 0.800. The significantly highest values in terms of chlorophyll a and b and carotenoid content were observed in 2014 at the onset of budding in the combination involving alternating magnetic field stimulation (F5), and were, respectively, 30%, 28% and 73% relative to the control.

Biodegradable materials are used in the manufacture of packaging and compostable films and various types of medical products. These have demonstrated high potential in medical applications: cardiac, vascular and orthopaedic conditions in adults as well in children. In our research, the extrusion-cooking technique was used to obtain environmentally friendly loose-fill foams as packaging. Potato starch was the basic raw material. Polyvinyl alcohol was used as an additive in the amount of 1%, 2% and 3% to replace starch. The components were mixed and moistened with water to various initial moisture contents of the blend (17%, 18% and 19%). The processing of starch foams employed the TS-45 single screw extruder-cooker (Gliwice, Poland) with the L/D ratio of 12. The foams were processed with various screw speeds (100 and 130 rpm) and with two types of forming dies (circular and ring die). The extrusion-cooking process efficiency (kg h−1) and the energy consumption (kWh kg−1) during the processing were also measured. The results showed that the processing efficiency of potato starch foams varied depending on the level of polyvinyl alcohol, the shape of the forming die and the screw speed applied. The analysis of energy consumption, mechanical properties and FTIR analyses demonstrated that the type of the forming die and the initial moisture level had the most significant impact on specific energy demands during the processing of potato starch-based foams.

The paper presents the results of studies conducted with the use of stationary and time-resolved fluorescence spectroscopy for the new derivative 2-Hydroxy-N-(2-phenylethyl)benzamide (SAL-3) in aqueous solutions with various concentrations of hydrogen ions as well as in solvent mixtures (i.e. media with changing polarity/polarizability). For the compound selected for the study placed in aqueous solutions with varying concentrations of hydrogen ions, the fluorescence emission spectra revealed a single emission band within most of the pH range, however, at low pH (pH<3) a significant broadening (noticeable effect of dual fluorescence) and shifting of the band was observed. Whereas, for water and polar (protic) solvents, we observed a very interesting phenomenon of dual fluorescence never before reported for this particular group of analogues (with the specific substituent system). Based on the results of the experiments, it was observed that the presented effects may be related both with conformational effects (related to the possible positioning of the–OH group on the side of the carbonyl system, which facilitates the possibility of proton transfer) as well as, most importantly, the effects of excited state intramolecular proton transfer (ESIPT–Excited State Intramolecular Proton Transfer) related in this case with the necessary (new/previously unobserved in published literature) presence of ionic and non-ionic forms of the compound). Both the conducted quantum-mechanical [TD]DFT–Time-Dependent Density Functional Theory) calculations and excited state dipole moment change calculations for the analyzed molecule in solvents with varying pH confirmed the association between the observed fluorescence phenomena and the two aforementioned effects.

Oils often have similar properties and can be difficult to identify based on color, smell or taste alone. The present paper suggests the use of Fourier-transform infrared spectroscopy (FTIR) in combination with chemometric methods to explore similarities and differentiate between samples of Moldavian dragonhead oil subjected to different storage conditions. Dragonhead is a plant characterized by very good honey output and ease of cultivation. Principal component analysis (PCA) was applied to a standard, full range of FTIR spectra. Additionally, hierarchical cluster analysis (HCA) was employed to explore the organization of the samples in groups relative to their “proximity” (similarity), by way of Euclidean distance measurement. PC1 and PC2 accounted respectively for 85.4% and 10.1% of the total data variance. PC1 and PC2 were strongly, negatively correlated within the entire spectral range; the only exception was the region corresponding to νs(-C-Hvst, -CH2) vibrations (aliphatic groups in triglycerides), where PC2 was positively correlated. The use of FTIR spectral analysis revealed noticeable differences in the intensity of bands characteristic of the ageing processes (markers of oxidative processes, etc.) taking place in oleaginous samples and related to the processes of fatty acids oxidation.

The aim of this study was to evaluate the quality of virgin oil pressed from spring rape seeds cultivated with the use of colloidal nanosilver and nanocopper solutions for processing seeds and as foliar fertilizer. The results show that the use of nanometals for seed processing and foliar fertilization increased the content of carotenoid pigments in the oil. The pigment concentration was higher compared to oil pressed from control seeds. The application of nanocolloids onto the seeds and subsequently on the growing plants contributed to the increase of the oxidative stability of oils. Both the acid number (AN) and peroxide number (PN) values were higher in the studied oils as compared to the control, but did not exceed the required allowable levels. Increased content of silver ions and slightly increased copper content was observed in the pressed oil. An infrared spectral analysis (Fourier-Transformed Infra-Red) conducted in combination with chemometrics allowed the classification of the studied oils in terms of their chemical composition. The analysis revealed the presence of bands characteristic of Cu-O-H vibrations after soaking the seeds and spraying the plants with copper nanocolloid, and of C-O-Ag after fertilization with silver nanocolloid.

Moldavian dragonhead (Dracocephalum moldavica L.) is a plant endemic to Asia where it has been used for centuries for the production of essential oils. With the constantly growing demand for vegetable fats it is necessary to find new methods of ensuring their high quality from the moment of production until their eventual purchase by the consumer. Correct assessment of the quality of oleaginous products is therefore one of the intensively explored scientific problems that stimulates the development of innovative methods of analysing such substances. One of the newer and, most importantly, faster alternatives in the context of analysing the quality of oil and the changes it undergoes during storage is offered by FTIR spectroscopy (Fourier-Transform Infrared spectroscopy). By measuring the relevant FTIR spectra, we were able to observe clear discrepancies in the intensity of bands characteristic of the aging processes taking place in the oleaginous samples due to the oxidation of their fat fractions. The chemometric analysis of FTIR spectra confirmed the high quality of the analysed oils. It is noteworthy that the analysed samples of Moldavian dragonhead oil did not show particularly extensive changes in terms of their FTIR spectra during long-term storage. It confirms their high durability and usability in food production as an excellent product. This is valuable information in order to make progress in the use of Moldavian dragonhead oil in food products.

In the food industry, the pulsed electric field (PEF) technique is used to support the process of extraction of various substances. The aim of this study was to analyze the effect of a number of PEF pulses applied to peppermint and caraway on both the content of essential oils (EO) and their spectroscopic properties. The examined herb species were placed in a special vessel in the working chamber of the device between two electrodes providing high voltage electric pulses. The pulses were delivered 0, 150, 250, and 350 times per a studied sample of each herb. Essential oils were then obtained by way of hydrodistillation. The infrared spectra for all samples were measured using an FTIR spectrometer in the spectral range of 3700–730 cm−1. The applied electric field of a predetermined number of pulses had no significant effect on the amount of distilled essential oil from caraway fruit, while in the case of peppermint, it caused a slight decrease in relation to the raw material not subjected to PEF exposure. It was found that the analysis of infrared spectra made it possible to compare the quality of the obtained oils with each other and to pre-determine their compositions.

The experimental material consisted of leaves obtained from 6- and 2-year-old alfalfa plants. Samples were obtained from a field experiment. One day prior to sowing, seeds were stimulated using He-Ne laser light with a surface power density of 6 mW∙cm-2 – free-fall exposure (L) repeated three times; alternating magnetic field with 30 mT induction and 30 s (P) exposure time; and a combination of laser light and magnetic field (L+P). The results of the stimulation treatments were referenced to non-stimulated samples (control – K). The obtained values of fluorescence lifetime varied from 8.98 to 12.90 ns (t1) and from 3.84 to 5.14 ns (t2). The physical factors applied caused an extension of the lifetimes (t1 and t2), as well as an increase in the chlorophyll a and carotenoid content in 6-year-old cv. Radius leaves, as compared to the control. Contrary observations (i.e., a decrease in the aforementioned indicators) were made for cv. Ulstar (old). In the case of magnetic field stimulation, the longest fluorescence lifetimes, the highest concentrations of chlorophyll a and carotenoids were noted for cv. Radius (old). The content of chlorophyll a was significantly higher in young Lucerne than in older plants.

Continuing our idea (Int. J. Geom. Methods Mod. Phys.) of extending some aspects of Onsager (Phys Rev 65:117–149, 1944) crystal statistics to three dimensions taking into account binary and ternary crystal structures in connection with fractals and chaos related to Ising–Onsager–Zhang lattices, we (1) use the Galois extension structure of the nonion algebra, (2) analyze ternary and binary structures of \({{\mathfrak {su}}}(3)\) as well as (3) analyze the identification of the construction of the collection of two ternaries with the collection of three binaries, (4) observe that the approach is applicable to quarks and elementary particles including introduction of colors and, finally, (5) suggest an analysis of three quaternaries vs. four ternaries, involving duodevicenion and/or quindenion algebra.

The paper presents the results of studies related to the impact of functional additives in the form of polylactide (PLA), polyvinyl alcohol (PVA), and keratin hydrolysate (K) on the physical characteristics of biopolymer foils. TPS granulate was obtained using a TS-45 single-screw extruder with L/D = 16. Foil was produced with the use of an L/D = 36 extruder with film-blowing section. The impact of the quantity and type of the functional additives on the processing efficiency and energy consumption of granulate extrusion, as well as the physical characteristics of the foil produced: thickness, basis weight, and colour were determined. By measuring the FTIR spectra it was determined the type and origin of the respective functional groups. It was observed that foils produced from granulates with the addition of 3% PVA were characterised by the lowest thickness and basis weight. Addition of 2 and 3% of PLA increased thickness and basis weight of starch-based foils significantly. Increasing the content of keratin in SG/K samples resulted in a decrease of brightness and intensify the yellow tint of foils, especially when 2 and 3% of keratin was used. In terms of the other samples, it was observed that the colour remained almost unchanged irrespective of the percentage content of the additive used. Infrared analyses conducted on foil containing PVA, PLA, and K revealed a change in spectra intensity in the frequency range associated with–OH groups originating from the forming free, intra- and intermolecular hydrogen bonds. Based on an analysis of the respective bands within the IR range it was also concluded that considerable structural changes took place with respect to the glycosidic bonds of starch itself. The application of the mentioned additives had a significant structural impact on the produced starch-based foils. Furthermore, the conducted UV-Vis analyses revealed a substantial increase in absorbance and a related reduction of the permeability (colour change) of the obtained materials in the range of ultraviolet and visible light.

The article presents the results of spectroscopic studies focused on a selected compound from the 1,3,4-thiadiazole group—2-(4-fluorophenylamino)-5-(2,4-dihydroxybenzeno)-1,3,4-thia-diazole (FABT)—in a micellar system formed by Triton X-100, a non-ionic detergent. Fluorescence measurements revealed the phenomenon of dual fluorescence whose emergence is related to the particular molecular organisation of the compound, which depends both on the concentration of the detergent and, most of all, the concentration of the compound itself. Dual fluorescence of FABT in a micellar system was observed for the compound dissolved in a methanol aqueous system, i.e., an environment wherein the dual fluorescence of the compound had never been reported before. Based on the interpretation of UV-Vis electronic absorption, resonance light scattering (RLS), emission and excitation fluorescence spectra, as well as measurements of dynamic light scattering (DLS) and Principal Component Analysis (PCA), we were able to relate the occurrence of this effect to the process of molecular aggregation taking place between FABT molecules in the micellar system in question. Results of fluorescence spectra measurements and time-correlated single photon counting (TCSPC) indicate that dual fluorescence occurs at detergent concentrations necessary to form micellar systems, which in turn facilitate the process of aggregation of FABT molecules. The correlation between the observed fluorescence effects and the previous measurements performed for analogues from this group suggests the possibility of charge transfer (CT) within the range of detergent concentrations wherein the aforementioned fluorescence effects are observed. It ought to be emphasised that this type of fluorescence effects are relatively easy to induce, which predisposes this groups of fluorophores as ideal fluorescence probes in the context of biological samples.

In connection with several attempts to extend Onsager’s (1944) crystal statistics to three dimensions keeping the spirit of the original Ising’s (1925) model, we suggest to involve binary and ternary extension of triangles in connection with fractals and chaos, following the ideas of Kikuchi (1951). We apply ternary Clifford algebras in addition to the usual (binary) Clifford algebras and identify two ternaries with three ternaries with the help of noncommutative Galois extension. In some sense, the paper continues the ideas of Ławrynowicz, Marchiafava and Nowak-Kȩpczyk (2006), and Kerner and Suzuki (2012) published in this journal.

The paper shows the use of Zwanzig's trajectories for spin wave description. The main idea consists in the application of Zwanzig's method to the description of the temporal derivative of magnetization in the direction of rf field in terms of Zwanzig's resolvents found for the magnetization components considered in the harmonic approximation. In particular, the spin waves resonance description can be tested. It reflects well the thermodynamical chaos as described in a fractal approach of the first author (2012, paper joint with Nowak-Kȩpczyk and Suzuki).

The Zwanzig's procedure (1960) for the description of the system of coupled harmonic oscillators is applied to the chain of interacting oscillations in order to find the adsorption power function, which is then determined by two terms: (i) the classical term proportional to the radio-frequency function squared and (ii) the additional term linear with respect to the radio-frequency magnetic field amplitude. From the physical point of view the first term is usually considered in oscillator effect. The second term found in the present paper via Zwanzig's procedure seems to be induced by fluctuations due to stochastic distributions of the oscillatory precession phases. It reflects well the chaos as described in a fractal approach of the first author (2012, paper joint with M. Nowak-Kȩpczyk and O. Suzuki).
