Prof. Carlos Augusto Fernandes de Oliveira graduated in Veterinary Medicine in 1983 and received his Master's (1991) and PhD (1994) in Public Health at the University of São Paulo (USP). Since 2009, he has been a Full Professor at the Department of Food Engineering, School of Animal Science and Food Engineering of USP. He was the Head of the Department of Food Engineering (2007–2011), and currently he is the head of the research working group registered at the National Council for Research Development (CNPq/Brazil) in the area of Milk Quality and Mycotoxins in Food Products and the Vice-Dean of FZEA-USP for the term. He is Co-Editor-in-Chief of the journal Food Science & Technology, also participating as Editorial Board member of several international journals. He has experience in food science and technology, toxicity and residues of mycotoxins in food products, food microbiology, inspection of animal-derived food products, chromatographic analysis and dairy technology, acting mainly on the following subjects: aflatoxins, fumonisins, residues, biomarkers, decontamination, lactic acid bacteria, pathogenic bacteria, microbial biofilms, milk, and quality.
